White Bread For The Bread Machine

Better than the recipe I've been using for the past 5 years! Lighter than most bread machine bread. I add 2 tsp of vital gluten to make it fluffier, but it doesn't seem to even need it.

Peanut Butter Chicken Skewers

We love this recipe! We have made it 4 times in the past 2 weeks. Sometimes I use a little red hot sauce instead of (or in addition to) the red pepper, but other than that I follow the recipe. I have made the sauce ahead of time and refrigerated it, and then just microwaved it when I was ready to use it. It thickens in the fridge but comes out of the microwave the perfect consistancy. This helps for quick weeknight dinners. We will definitely make this again!

Banana-Zucchini Bread

I followed the recipe, except I omitted the cranberries and walnuts because I didn't have them on hand and I made muffins. I also added a few Tbsp of milled flax seed. We loved them, even my husband who doesn't like zucchini. Next time I will add the walnuts and maybe the cranberries too. I cooked the muffins 25 mins for regular size, and 15 mins for mini. It made 24 regular and 12 mini.

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

I followed the recipe with the exception of halving the cinnamon (I ran out!) and using fresh strawberries. SO GOOD! I made them for my daughter's school birthday celebration and ate so many I had to immediately make another batch. I made mini-muffins and cooked for 12 minutes.

Easy Apple Cheese Danish

Very easy to make, and I received compliments. I didn't roll the pastry out, instead I left it the thickness it was and used the extra to cover the bottom of the pan completely. I did the same for the top. The crust was a little tough, but my puff pastry had been in the freezer awhile, so that could be why (or because I didn't make it thinner?). Instead of the cinnamon and sugar, I think I will drizzle a glaze on it next time.
