Todd's Famous Blueberry Pancakes

I followed the recipe to a t. My batter was super thick. I triple checked to make sure I had the measurements correct. It was so thick, that when I was ready to cook it, it was difficult to scoop onto griddle. It wouldn't cook all of the way though. I added 1/2 cup milk to second batch before cooking, and it was better, but not fantastic. I'm disappointed I wasn't able to enjoy the same great pancakes everyone else raved about in other reviews.

Penne with Shrimp

Very delicious start. I used Rotel hot canned tomatoes plus fresh basil and parsley. I also added oregano and red pepper plus some chopped spinach because I didn't feel like making a salad on the side. It turned out terrific. Perfect Monday night meal in June! Flavorful but light. Hubby cleaned his double serving bowl and went back for more.

Penne with Chicken and Asparagus

This is a great weeknight recipe. It is great as written, but I added a couple of extra things the 2nd time, and it was even better. As Laurel B posted later, sauteed mushrooms are a fantastic addition. I sautee the mushrooms, garlic and asparagus for a few minutes before adding the chicken broth. Also, I like a little extra sauce, so I added 1/2 cup of wine, and 2 Tbsps of Half and Half, as well as a good amount of red pepper flakes. I make as directed for 2 of us and enjoy for "lunch leftovers."

Guacamole

I absolutely love this recipe. My Uncle taught it to my mom, who taught my aunt and me, who taught my cousins. Everyone has tried to make their own version. Since I found how easy it is in a food processor, I make it often. I am convinced that this version is the best. If you do not have a food processor, simply dice up the ingredients and mash the avo. Then mix together. I hope you enjoy.

I really love this recipe. As a suggestion, I have stated adding a few shakes of cumin since I posted the recipe. I think it really rounds out the flavor. I hope you enjoy.

Best Marinara Sauce Yet

This really is the best marinara sauce. I added 4 cloves of garlic and sauteed it with the onion. Also, I wanted a little heat but didn't have any red pepper flakes, so I added a few dashes of tabasco and more pepper. Finally, I made it for Sunday dinner, so I had all day to let it simmer. By the 3rd hour, it was awesome. Used it for Braciole and spaghetti. PERFECT!

Southern Potato Salad

This recipe is great! My husband admits it may be better than his mom's (shhhhh). I add a little sour cream to give it a lighter taste, as well as paprika and chives. It is always a hit!
