Todd's Famous Blueberry Pancakes
I followed the recipe to a t. My batter was super thick. I triple checked to make sure I had the measurements correct. It was so thick, that when I was ready to cook it, it was difficult to scoop onto griddle. It wouldn't cook all of the way though. I added 1/2 cup milk to second batch before cooking, and it was better, but not fantastic. I'm disappointed I wasn't able to enjoy the same great pancakes everyone else raved about in other reviews.

Penne with Shrimp
Very delicious start. I used Rotel hot canned tomatoes plus fresh basil and parsley. I also added oregano and red pepper plus some chopped spinach because I didn't feel like making a salad on the side. It turned out terrific. Perfect Monday night meal in June! Flavorful but light. Hubby cleaned his double serving bowl and went back for more.

Penne with Chicken and Asparagus
This is a great weeknight recipe. It is great as written, but I added a couple of extra things the 2nd time, and it was even better. As Laurel B posted later, sauteed mushrooms are a fantastic addition. I sautee the mushrooms, garlic and asparagus for a few minutes before adding the chicken broth. Also, I like a little extra sauce, so I added 1/2 cup of wine, and 2 Tbsps of Half and Half, as well as a good amount of red pepper flakes. I make as directed for 2 of us and enjoy for "lunch leftovers."
