Greek Pasta Salad I

Easy and delicious! I used a whole box of whole wheat rotini pasta, rather than the mere 2.5 cups the recipe called for. The dressing was still enough for the additional pasta. I left out the mushrooms and sausage. I used sliced red onion instead of green onions. Next time, I will add artichoke hearts, and that will make it a five-star recipe!

Russian Pancakes - Blini

These tasted yummy, but weren't as thick as the ones that my husband's grandmother used to make. She passed away before I knew enough to ask her for her recipe. This one is a good, tweak-able recipe though. Hopefully it will help me recreate the ones I remember!

French Onion Soup Gratinee

On a cold fall day, this soup is perfection! My picky husband absolutely loves it, and I do too. l make it in extra big batches so I can freeze half for another chilly weekend. Every time the season changes, I think about the different dishes that I get to look forward to, and this dish is definitely what comes to mind when it starts to feel like fall.

Pizza Dough I

This pizza dough is so easy and makes GREAT thin crust pizza! The recipe gives you all the basics and you can spice it up however you like. I like to add onion powder, and maybe some herbs. What it comes down to is that this recipe is very versatile and can be thrown together in a matter of minutes. No waiting for the dough to rise. Perfect!

Jay's Signature Pizza Crust

This was my first time cooking with yeast, and I am happy to say it was easier than I thought! The dough was tasty, but keep in mind it makes a lot of it-- enough to cover an entire 18X13 pan, and I would have rolled it thinner if I had the space. If you have a round pizza tray/stone, I recommend using it to make two personalized pizzas. I will keep this recipe because it was so easy and tastes better than store bought.

Slow Cooker Chicken Pot Pie Stew

I loved how easy it was to make this stew! My husband is the pickiest eater I know, and even he went back for seconds. The stew was salty for me- but not enough to stop me from eating it- and my dad said it had too much pepper for him. I like spice so this didn't bother me. Next time, I will use garlic powder instead of garlic salt, and maybe go without the celery salt. Also, it was rather thick, even for a stew, so I would add some wine to water it down a bit. Definitely worth trying and modifying to personal taste!

Golden Rum Cake

I didn't get to taste this cake. My husband brought it in to his office, and there were no leftovers for him to bring home to me! Based on that, I'd say it was a hit. It smelled delicious and looked beautiful. The downside was the last part of making it. I didn't pour it into the bundt pan, as recommended, and it took a very long time for me to pour the glaze/sauce over the cake and let it soak in. Next time, I will try pouring into the bundt pan to soak.

Bacon Cheddar Deviled Eggs

I'm always amazed at how quickly these deviled eggs disappear -- and I double the recipe! Anything with bacon is sure to be a hit. Deviled eggs are not my favorite thing to make, but people keep requesting them, so it looks like it's "my thing to bring" now. I don't add mustard, because my husband doesn't like it, I sprinkle paprika on top. I have used maple bacon a couple times and someone said it was like eating a McMuffin in a single bite.

Homemade Black Bean Veggie Burgers

I'm not a vegetarian, but these are good to have if you just feel like having something healthy. The only thing I did different from the recipe was 1cup bread crumbs. The flavors were a bit strong, but I couldn't figure out if it was the garlic or the cumin, as other people have mentioned. It wont stop me from making it again. Next time I'll just use less and see what happens. Compared to a regular burger, they are mushy, so I recommend a soft bun rather than something toasted that will squish it. I might even mash one up and put it in a pita for lunch tomorrow!

Slow Cooker Chicken and Dumplings

Incredibly easy to throw together, and enjoyed by my incredibly picky husband! This recipe is a keeper, even though I feel like it's not the healthiest choice. Tasty and easy are good enough reasons to go back to it.

Black Bean and Salsa Soup

I liked this recipe because it was so easy and the soup was tasty. I used a medium salsa that has a bit of a smokey flavor to it. I wish other reviewers included what kinds they have tried because there are so many out there! Next time I will experiment with a different salsa, just to see what it's like. As other reviewers have mentioned, I left one can of beans whole. I also added some cayenne because I like spice. I am the only one of my family who will eat black beans, but I'd make this again because it takes no time at all.

Southwestern Pasta Salad

I have made this twice now and I love it! My tips: extra cilantro (if you like it) and throw even more in right before serving. Add the tomatoes before serving so they are more crisp than soggy. Extra lime juice, less oil, and squeeze a lime over it before serving. I last brought it to a pool party. I was hoping it would get overlooked so I could take it home with me (sneaky,greedy, I know!), but someone opened it toward the end of the night. There were people huddled around the counter eating it directly from the container! I left for home without it :( but the friend throwing the party said that she brought it as a snack for an outdoor event. She and her friend also loved it and were telling me about it two weeks later!

Dirt Cake I

A coworker made this for an office party, and I thought it was such a cute idea!! Just the display was impressive- I would not have guessed it was food at first! The dirt pie was delicious though, and was gone by the end of the day. She left the gummy worms out, although I'm sure they'd be great for kids. Also she did a low fat version- I am sure the regular is just as flavorful! I will definitely make this for the next bbq, party, etc. I go to.
