Chicken Chili

Reviewed: Feb. 10, 2012
Truly delicious recipe. I had to substitute one can of pink beans for the garbanzo but the two bean combination added a nice flavor. I opted for 1/2 tablespoon of the ground cumin which was just enough. I don't understand the need for 2 cups of water with all the liquids from the broth and diced tomatoes. Omitting the water gave the chili sauce just the right consistency. I served the chili over cooked elbow macaroni. I will make this recipe again.

Slow Cooker Chicken and Dumplings

Reviewed: Mar. 11, 2011
Delicious. My family loved it and will make it again. I made minor adjustments. I added 2 tablespoons of flour to thicken and 1/2 teaspoon each of salt and pepper. I added the bisquit dough at the last 2 hours of cooking cycle. The next time, I will add in frozen peas and carrots.

Broccoli Rice Casserole

Reviewed: Jan. 3, 2011
I chose the recipe based on the rating and found it disappointing. The large onion overwhelmed the recipe. And, I didn't like the Cheez-Wiz. If I try it again, I will use a small onion, broccoli stalks instead of chopped and real, shredded cheddar cheese.

Ricotta Cookies II

Reviewed: Dec. 12, 2010
Love this cookie! My family loves it and it's kid tested. It's a light, little cake. The only adjustment was the amount of vanilla. 2 Tablespoons must be a misprint. I used 2 teaspoons and it turned out great!

Buttermilk Pancakes II

Reviewed: Dec. 4, 2010
Delicious! I modified this recipe by replacing one cup of white flour with half/half of ground and light spelt flour and 1/2 teaspoon of vanilla. The spelt flour makes these pancakes melt in your mouth and added nutrition.

Sausage Gravy III

Reviewed: Jun. 26, 2010
This is an excelllent recipe. My only suggestion is to cut the milk to 2 Cups which will make a thick gravey. I used a 1/4 teaspn of pepper. And, I used Jimmy Dean breakfast sausage.

Caramel Apple Cheesecake

Reviewed: Dec. 31, 2009
This is a delicious cheesecake. I found I needed to adjust the baking time to 45 - 50 minutes. Best to watch for doneness as oven temps varying.

Mom's Buttermilk Pancakes

Reviewed: Nov. 8, 2009
I tried this recipe as written and should have known better about the amount of salt it calls for. A 1/4 Teaspn per cup of flour is enough. I also think I would cut the baking soda next time to 1/2 teaspn per cup of flour as well. There's sodium in baking soda. With the recipe written as it is, I have to give it one star due to the high sodium content. The recipe as written with the amount of salt plus baking soda makes the pancakes taste like brine. I couldn't eat it. I don't mean to be harsh but if anyone tries the recipe as written they will see what I mean. Next time I will make the adjustments and think it will turn out excellent pancakes.

Thank you for this receipe. I love it. I made small modification to it. I use ground turkey and added some fresh basil to the meat mixture. I also added 3/4 of a teaspoon of dried oregano to the sauce because I love the spice.

Savory Chicken Breasts

Reviewed: Jun. 25, 2009
I love this recipe. It's so easy and very tasty. I modified it a bit by adding a bit of salt with the pepper, using American cheese instead of Swiss, reducing the bread crumbs to 1/2 cup and Cream of Mushroom soup instead of Cream of Chicken. I also use 5, 1/2 chicken breasts instead of 4. My family loves it! Thank you!
