Pineapple Upside-Down Cake V
My husband just called this 'the best pineapple upside-down cake I've ever had in my life' so I'd say it was a winner! The only change was that I substituted 1/4 C rum for the same amount of pineapple juice in the cake mix, which added a subtle and tasty flavor. Overall it was pretty easy and delicious! We'll definitely have this again.

Sukhothai Pad Thai
Very tasty! I'm not sure how authentic it is, but it certainly pleased me and my husband! I did do some trading with the spices as a few people suggested - I didn't add the additional sugar at the end, and I used some 'Thai seasoning' and chili powder instead of the oriental radish. I also substituted lime juice for the tamarind pulp because our grocery store had none. Definitely a dish we'll serve again and keep trying some different flavor combinations just for fun!

Sean's Falafel and Cucumber Sauce
I made this for friends who had never even heard of falafal - we all liked this recipe! It had a nice flavor without being too spicy or any one ingredient standing out. I didn't have any trouble shaping the patties and frying them, and I even saved some of the mix to make later this week. The only difference in my recipe was that we didn't have fresh parsley, so I used the last of my dry parsley and something else to substitute (don't remember now...). Came out great!
