Took a while with me standing over everything watching it cook, but in the end the time was well spent. It's more of a roasted seasoned vegetable dish with rice than it is a "stew", but great nonetheless.

Mama's Best Broiled Tomato Sandwich

Delicious recipe. I made it with thickly-sliced toasted french bread and added some dried basil to the mayonaise spread. Would be great with fresh basil in between the bread/spread and the tomatoes on top. Enjoy!

Tofu Tacos I

Extremely quick and easy--took less than 15 minutes to cook everything and toast the taco shells. I used tempeh instead of tofu, cooking it the same way.
