BBQ Chicken Pizza I

I used the basics of this recipe: bbq sauce, chicken, onion & gouda. But we prefer deep dish. So we added a few things: mozzarella, mushrooms & olives. Turned out great, though perhaps a little sweeter than I prefer. When I make it again, I'll reduce the sweeteners.

Eye of Round Steak and Ketchup

Very easy, very tasty, plus it's versatile. I followed recipe exactly, but I had some mushrooms calling out to me. So I threw those in with the onions. Turned out great. Served with steamed rice and sautéed squash (zucchini & yellow) with Parmesan. Definitely will use again.

Creamy Parmesan Sauce for Fish

Any time my wife has seconds on anything, I know it was a big success. And that's what she did with this. I followed the recipe almost exactly, the only changes: substituted red onion (didn't have green) and added garlic (because we always include garlic). I had a question about hi or low temp for the broiler. Opted for hi and it turned out just right. Also, next time I make it I will create a little wall with the aluminum foil around the fish to prevent the creamy sauce from spilling.

Banana Smoothie I

Simple Pork Rib Dry Rub

Definitely too hot in its original form. I followed the toned down version and felt it was still too much. Also, the outer layer was too tough. But that might be my fault for leaving it on too long. I will try it again with appropriate adjustments: Less cayenne, and shorter time on the grill.

Spaghetti with a Kick

We tried this for the first time tonight because I wanted something meatless for a change. My wife rated it 9 out of 10. I thought it could use more flavor. One problem was the recipe calls for 16 oz jar of spaghetti sauce and all I had were 24 oz jars. So I adjusted the cumin and hot sauce accordingly. But it still came out more subdued than I like it. So next time I'll increase both cumin and hot sauce even more. And I'll probably throw in a pinch of cayenne as well. Colorful appearance was great; texture was great. It was just the mild flavor that brought it down for me.

Slow Cooker Cider Pork Roast

I prepared this exactly as the recipe says and it came out very bland tasting. Too much water; couldn't taste any effect from the cider or the apple or the garlic or the pork for that matter. I'll try it again, but will definitely take into account some of the suggestions from others: less water, more other things. And why use a processor? It only added time and trouble without contributing to the final product.

Chicken Tortilla Soup V

This was incredibly good. So good that I could not stop at just a little taste test. Basically just followed the directions. Next time I'll try the black beans that others mentioned. And the slow cooker angle sounds interesting too.

Chinese Roast Chicken with Gravy

Turned out great: tasty and moist. Other complained about saltiness, but we did not find that to be so. The taste was a good balance. I followed another review and added chopped onion and minced garlic. Also, basted the chicken a couple times during the bake-time. Otherwise, I followed the recipe exactly.

Fish Fillets Italiano

Fun, easy recipe. Colorful and healthy. I felt it needed a little more flavor. We tried it again tonight and it was a big hit. Still could use a little more flavor. But we will definitely enjoy it again.

Cheesy Baked Salmon

WOW! delicious! I was concerned about cooking that long at that temp. But it worked out just great. Our quantity of salmon was a little less than the recipe calls for. Otherwise the only adjustments we made was to use more garlic (3 cloves instead of 2) and more green onions & more cheese (the latter because others had recommended). Salmon flavor still came through in just the right balance of flavors.

Smoked Salmon Spread

I've made this twice now & both times a great hit. Second time halved cream cheese because it's just wife & me. Great blend of flavors. But I prefer a little more of the Worcestershire & hot sauce; so I kept original amount of those with just half of the cream cheese.

Baked Cornish Game Hens

Very popular with our dinner guests. So moist and tasty. Recipe doesn't say how long to brown the hens at 500. We tried 10 minutes but they still weren't quite brown. So we switched to broiler for a couple minutes more. Otherwise, I followed recipe exactly. Next time I might try some corn bread stuffing including ingredients in recipe. We will definitely use this again.

Tangy Slow Cooker Pork Roast

easy and tasty. Our pork roast was 3 1/2 lbs so I figured for a little longer cooking time. Plus I added potatoes, carrots, and celery (in addition to the onion). As a result, I did not taste the hot sauce that gives the dish its name. So next time I'll add more hot sauce, maybe 1/2 tsp or so. And I think I'll pull back on the sugar. All that to say, It's an easy recipe to tweak to your personal preferences. Second time, I used pork loin chops and doubled the sauce. Fortunately I stopped the cooking at 4hours (instead of 6 per recipe) because with the chops, it needs less time. Even so, at 4 hours, it seemed a little dry to me. That was my doing, not the fault of the recipe. NOTE TO SELF: with chops, cook about 3 or 3 1/2 hrs.
