Hi all. I used skinless boneless thighs & marinaded with the fresh rosemary, oregano, sliced garlic & olive oil for about 90 min. put the thighs and potato wedges on a cookie sheet covered with parchment paper. after 1 hr in the oven I transferred it to a casserole dish to serve. included carrots steamed with brown sugar and brussel sprouts with almonds. the parchment paper went in the garbage & no mess to clean. my hubby & 15 yr old son both loved it. i am on a raw food diet so could not rate the recipe but it did smell lovely. btw i had coleslaw and a grated beet salad which were lovely. would really like to see more raw recipes on this site.
