Easy Vegetable Beef Soup

Reviewed: Nov. 12, 2012
Yum! This is so good. I used 1 quart broth, 1 quart water, and 4 tsps bouillon granules because that's what I had. I also sauteed the onions with the ground beef. I doubt these things made much difference, but thought I'd mention it FWIW. So easy and yummy - definitely a keeper.

Crustless Spinach Quiche

Yum! I only put in 1 cup of cheese, though. Can't imagine 3 cups - and I love cheese.

Spicy Glazed Pecans

Reviewed: Aug. 9, 2011
I was going to give this 4 stars because at first they taste uninteresting and it was difficult to get them all covered. BUT, as I sat down to write the review, I could not stop eating them! A little too spicy for me (and I like spicy), but my tongue will just have to suffer. These are addictive. Somebody take them away, please . . .

Ratatouille

Well, I'm a convert. This took forever to make but is delicious! I subbed butternut squash for the eggplant (not a fan). Yum!

So good! Even my anti-health-food husband said, "I revise my earlier disdain," and went back for thirds!

Chocolate Peanut Butter Bars IV

Reviewed: May 1, 2011
Followed instructions as is except added 1 extra cup of choc chips. I just didn't think it would cover the whole thing. Hubby LOVES them! The first one busted when I tried to get it out of the pan, but all the others came out beautifully. Next time I will wait 10-15 minutes before cutting and definitely crush the graham crackers finely. My husband loves you, Justine.

'Day Before Payday' Kielbasa and Corn Hash

Reviewed: Nov. 5, 2009
Yum, yum, yum. I used 1 each red, green, and yellow peppers and 1/2 onion instead of the frozen, and added 1 tsp each salt and pepper. Gotta have the egg. So yummy!

Great Mac and Cheese

Reviewed: Sep. 16, 2010
This is it! I have been looking for years for a good mac & cheese recipe that uses real cheese not processed. This is nice and creamy, not grainy. Followed recipe exactly. Yummy, yummy, yummy.

Beaker's Vegetable Barley Soup

Outstanding! So easy and so yummy. Perfect for a cold night and perfect for the diet. Even my husband gave it a thumbs up (although I had to add chicken for him). Thanks for a great recipe!!

Espinacas con Garbanzos (Spinach with Garbanzo Beans)

Reviewed: Apr. 30, 2014
Yummy, yummy, yum, yum! The only change I made was using fresh spinach. I tasted it before putting the cumin in and it was yummy that way, but I liked it with the cumin, too. Will be making again and again.

Very yummy. Could probably halve the butter and still be delicious.

Low Carb Jambalaya

Very yummy, but 45 minutes my eye. This takes forever with all the chopping and precooking. Will make again but will have to plan way ahead. Very tasty and diet friendly.

Spinach and Leek White Bean Soup

Reviewed: Jan. 21, 2013
Yummy, healthy, & easy. What more can you ask for? Will add more broth next time. I also took the advice of other reviewers and put the spinach in the bowl, then ladled soup over it. Will also try the rosemary/thyme combo, but I loved it as is. Thank you!

Homestyle Turkey, the Michigander Way

Reviewed: Jan. 2, 2012
Knocked it out of the park! Thank you! The drippings were a bit salty - thus the gravy, too (and I am a salt lover). Will probably skip the seasoning salt next time, but this was the moistest, yummiest turkey I have ever tasted, let alone cooked myself. Outstanding!

Chicken Zucchini Casserole

Reviewed: Feb. 28, 2011
So good! I only used 1/2 cup butter and a splash of milk to give enough moisture to the stuffing. (As much as I love butter, I couldn't bring myself to put in more than 1 stick.) Otherwise followed to a T. Can't believe it tasted so good. Even my finicky husband agreed.

Spring Vegetable Soup

Reviewed: Dec. 10, 2012
I was surprised at how much I liked this soup without any seasonings! I added salt & pepper to my bowl and found that I actually liked it better plain - this from a salt lover. Next time I will skip the potato - no need for 2 starches and less chopping, but this recipe is a major find! Thank you!

I am still tweaking to perfection, but this is a major find! All of the bottled ranch dressings without MSG taste horrible. This is yummy, yummy, yummy and easy! No chopping, just mixing. Thank you!

To Die For Blueberry Muffins

Reviewed: Sep. 5, 2011
Outstanding. Perfect flavor. Don't overcook (20 minutes was undone - 25 minutes was overdone). Per other reviews, I tried brown sugar for the topping - does not work well. Brown sugar is too dense for these light muffins - although maybe that was because my butter was slightly melted . . . . I still need to work on getting the topping right, but that's on me. This recipe is great!
