Health Nut Blueberry Muffins

Reviewed: Jul. 30, 2011
So yummy. Great as is and easy to alter if desired. The second time I subbed 1/2 c. applesauce for the banana & oil per other reviews and increased sugar to 1 c. (bcs applesc was unsweetened), used all whole wheat flour and all brown sugar, added strawberries with the bb. So yummy - going back for my 3rd right now!

To Die For Blueberry Muffins

Reviewed: Sep. 5, 2011
Outstanding. Perfect flavor. Don't overcook (20 minutes was undone - 25 minutes was overdone). Per other reviews, I tried brown sugar for the topping - does not work well. Brown sugar is too dense for these light muffins - although maybe that was because my butter was slightly melted . . . . I still need to work on getting the topping right, but that's on me. This recipe is great!

Homestyle Turkey, the Michigander Way

Reviewed: Jan. 2, 2012
Knocked it out of the park! Thank you! The drippings were a bit salty - thus the gravy, too (and I am a salt lover). Will probably skip the seasoning salt next time, but this was the moistest, yummiest turkey I have ever tasted, let alone cooked myself. Outstanding!

'Day Before Payday' Kielbasa and Corn Hash

Reviewed: Nov. 5, 2009
Yum, yum, yum. I used 1 each red, green, and yellow peppers and 1/2 onion instead of the frozen, and added 1 tsp each salt and pepper. Gotta have the egg. So yummy!

Spinach and Leek White Bean Soup

Reviewed: Jan. 21, 2013
Yummy, healthy, & easy. What more can you ask for? Will add more broth next time. I also took the advice of other reviewers and put the spinach in the bowl, then ladled soup over it. Will also try the rosemary/thyme combo, but I loved it as is. Thank you!

Chocolate Peanut Butter Bars IV

Reviewed: May 1, 2011
Followed instructions as is except added 1 extra cup of choc chips. I just didn't think it would cover the whole thing. Hubby LOVES them! The first one busted when I tried to get it out of the pan, but all the others came out beautifully. Next time I will wait 10-15 minutes before cutting and definitely crush the graham crackers finely. My husband loves you, Justine.

Megan's Granola

Reviewed: Aug. 21, 2011
None of the store bought granola's are quite right (not to mention the expense), so I finally resorted to making it. This is the best! Not too sweet, and I took another reviewer's suggestion of not stirring so that it would be chunky. Yum, yum!

Crustless Spinach Quiche

Yum! I only put in 1 cup of cheese, though. Can't imagine 3 cups - and I love cheese.

Angel Chicken Pasta

Reviewed: May 24, 2009
Oh my goodness, yum! Follow the directions exactly, though. I added a little chicken broth (based on reviews) because the sauce seemed too thick before baking, but it got thinner during the baking process. Will make many times again, but will probably double the sauce (because I love sauce!). Will also try it in the crock pot per other reviews. Thank you!

Low Carb Jambalaya

Reviewed: Jan. 1, 2013
Very yummy, but 45 minutes my eye. This takes forever with all the chopping and precooking. Will make again but will have to plan way ahead. Very tasty and diet friendly.

Kathy's Delicious Italian Pasta Salad

Reviewed: Dec. 15, 2012
Well, Kathy, this IS delicious! I tried it with cheats the first time - pepperoni instead of salami and shredded cheese instead of cubed - just to see if I liked it. I am totally bringing this to my next party - will chop up salami and cheese as written for better presentation. Also, the balsamic vinegar only slightly discolored the pasta. I wouldn't even have noticed if I hadn't read the other reviews. Definitely a keeper!

Espinacas con Garbanzos (Spinach with Garbanzo Beans)

Reviewed: Apr. 30, 2014
Yummy, yummy, yum, yum! The only change I made was using fresh spinach. I tasted it before putting the cumin in and it was yummy that way, but I liked it with the cumin, too. Will be making again and again.

Chicken Zucchini Casserole

Reviewed: Feb. 28, 2011
So good! I only used 1/2 cup butter and a splash of milk to give enough moisture to the stuffing. (As much as I love butter, I couldn't bring myself to put in more than 1 stick.) Otherwise followed to a T. Can't believe it tasted so good. Even my finicky husband agreed.

Sue's Two-Chocolate Chip Cookies

Reviewed: Dec. 6, 2012
Perfection! I don't know why this is so much better than the recipe on the back of the chocolate chip bag, but it is. The only difference is that this recipe has less salt - and the 2 types of chips, of course. Apparently less salt puts it over the top because these cookies are to die for.
