Hawaiian Banana Nut Bread

I loved this recipe, though I could have easily halved it to feed two of us for a week. I used unsweetened applesauce for all the oil and it was delicious, but uncommonly moist. I'm not sure if that's a product of this recipe or not. I'd try next time without so much sugar (maybe half?). Still delicious and easy!

Slow Cooker Mediterranean Stew

10 hours=mushy dinner! I should have known better. The flavor is really interesting--the raisins and cinnamon lend a slightly sweet quality to the meal.

Hummus IV

Ok. I like my hummus spicy and not too chunky. This came out dry and a bit flavorless (despite all the garlic!) . I'd add a bit of olive oil, or perhaps cook the garbanzo beans a bit...

Chocolate Sour Cream Cookies

Really tasty! I made with white whole wheat flour (it was all I had!) and they weren't unbearably heavy. Also, not tremendously sweet, which I like.

Joan's Pesto

The lemon is a delicious idea; very springy! Came out way too oily, however. I had to add 2 more cups of basil to taste it at all. Has a nice, bright color.

Ginger Glazed Mahi Mahi

My husband--anti-fish man, as I like to call him--LOVED this. I did overcook his mahi, so its texture was more chicken-like, but I cooked mine perfectly and this was a DELICIOUS dish. DH actually asked for it again!

Cream Corn Like No Other

Delish! I've also made a lighter version (not light, but closer!). I use the cream as indicated, then half the milk--and I use 1% milk instead of whole. Then, I add about 3/4 cup of cooked pumpkin. I use fresh, but I'm sure canned would work fine. It tastes wonderful, contributes to that rich texture that the whole milk & cream gives, and adds a few more vitamins into the mix. DH loves it!

Pork Dumplings

Not bad. I've found better, and no more complicated, dumplings in an asian cookbook that we much prefer. Maybe more ginger would help?

Fabulous! Mine was too salty, but probably due to user error rather than bad recipe portioning. That said, taste as you go (always a good bit of advice for cooks, I guess).

The mix of oregano with tequila was a little weird--the Italian and Mexican flavors were a bit confused. I'll try next time with cilantro or coriander.
