Loved this! I made it for dinner tonight, because I had some canned chicken that I wanted to use in something, and I had coconut milk. Voila, curried coconut chicken! I used 2 cans of Kirkland chicken chunks, decreased the salt, and left out the onion and garlic for health reasons. I decreased the sugar to about 2 tablespoons, because I think the coconut milk is plenty sweet. I added 1 red bell pepper, cut into squares, and also a handful of raw cashews. I simmered for over an hour. I LOVE the extra sauce that soaks into the rice. Jasmine rice was delicious with this curry- I'll definitely be making this again! Extra bonus: It's gluten and dairy free!
