Curried Coconut Chicken

Loved this! I made it for dinner tonight, because I had some canned chicken that I wanted to use in something, and I had coconut milk. Voila, curried coconut chicken! I used 2 cans of Kirkland chicken chunks, decreased the salt, and left out the onion and garlic for health reasons. I decreased the sugar to about 2 tablespoons, because I think the coconut milk is plenty sweet. I added 1 red bell pepper, cut into squares, and also a handful of raw cashews. I simmered for over an hour. I LOVE the extra sauce that soaks into the rice. Jasmine rice was delicious with this curry- I'll definitely be making this again! Extra bonus: It's gluten and dairy free!

Pumpkin Zucchini Bread

I was looking for a new way to use my garden zucchini, and this sounded yummy for fall. It turned out yummy, but a little less moist than I was expecting. Maybe my zucchini was a little dry, or maybe it's because I used 1/2 cup butter 1/2 cup oil. But it's good bread, and I would make it again.

Mom's Zucchini Bread

Great recipe for zucchini bread- it's basic, simple, and delicious. You can sub applesauce for some oil, or wheat flour for some white, or even some brown sugar for white sugar. But this time I followed the recipe pretty exact and it turned out deeeeelicous. The batter is very thick until you stir in the zucchini, which adds lots of moisture.

Whole-Wheat Chocolate Chip Cookies

YUM. Love these. I used 1/2 cup I Can't Believe It's Not Butter stick, and 1/4 cup real butter. Used about 3/4 cup of each sugar, and used about 1 1/2 cups milk chocolate chips. These came out the perfect shape and chewiness...they didn't flatten, thank goodness! The wheat flour adds great substance, and makes them feel healthier. :)

Pumpkin Turkey Chili

I love the concept of this chili! The pumpkin adds creaminess and tons of nutrition. I made the following changes to add some pizazz: 1 can of corn, 1 can of black beans, an additional can of diced tomatoes with green chilies, a cup of chicken broth, and a little cumin and onion salt. You can really add anything your heart desires, and it'll turn out delicious. Great with cheese, sour cream and tortilla chips!

Baked Spaghetti

YUM. I was looking for a yummy dinner that would utilize the cottage cheese in my fridge, and this recipe sounded deliicious. It did not let me down! I used just one jar of spaghetti sauce, like the recipe calls for, and thought that was plenty! It was super wet/flavorful. I didn't have ground beef on hand, but I used a little italian turkey sausage and browned that with the onion. I only used about a cup of mozarella, but thought it was plenty cheesey! Love the cottage cheese addition. Thanks so much, I just had dinner and I'm already craving more! My husband and I have enough for leftovers all week!

Fresh Fruit Cobbler

Turkey-Stuffed Peppers

I did make variations, which is why I gave it 4 stars instead of 5. But I LOVED these! The white sauce is so different and delicious. I added wochestire sauce, rice, parmesan cheese to the mix. We'll definitely be making these again.

Apple Crisp II

SO dang good! We used 10 green apples, diced. Mixed them around with the flour/cinnamon sugar mixture and added 1/4 cup water. We accidentally used only about 6 tbs butter in the topping, but it still turned out deeeelicious. Thank you!

Cheater Pot Pie

Very creative way to make this yummy comfort food on a whim. I followed some suggestions and put some biscuits on the bottom and baked those first, and only used 1 can of soup. I cooked the veggies/chicken in a roux of butter, flour, chicken broth. I've made this a few times now and we love it!

Chewy Crispy Coconut Cookies

I made these cuz i had some coconut in my fridge that i wanted to use. I thought they turned out really good, and i made a few variations. I also used Crispix (had it on hand) and added chocolate chips, and used a little less salt. they come out plenty salty, and are nice and chewy/crispy. thanx!
