Hummus III

This was great. I used dried beans and should have used fresh lemon juice, but will next time. I used about a cup of cooking liquid from the beans to thin this out and also used extra garlic. This is a great base recipe to play around with and customize to your own tastes.

Snickerdoodles II

There were delicious!!! Sooo good, and my first time making snickerdoodles. My only concern was the consistency of the dough. It was really dry and crumbly and hard to form into cookies. It just seemed like there was too much flour. Or I'm wondering if I didn't mix the shortening in well enough? In any case they taste awesome!!

Fluffy Pancakes

These were out of this world! Had to make some changes due to allergies- omitted the butter altogether as another reviewer mentioned and used coconut milk. We also love blueberry pancakes, so I added a couple handfuls of frozen berries and a few tbsps of cinnamon. These were great! Also subbed spelt flour and I think next time I'll add some ground flax. Thanks for a great recipe!

Quick and Easy Brownies

These were ok. I am giving it 4 stars because I can't follow the exact recipe- I had to use shortening instead of butter because of a dairy allergy. I also omitted the nuts b/c of an allergy. I used 1 c of flour as others suggested and still found it to be too cake-like. This could be due to the shortening though. I also didn't find these to be the fudgy, chocolate taste that I love in brownies. Again, this could be due to the butter being left out.

Mom's Best Waffles

These were great! SO east and quick to make. We have allergies and I try not to use white flour so here are my changes: 2 c spelt flour 2 tbsp honey 2 c coconut milk 1 tsp vanilla some cinnamon and frozen blueberries These were great! Thanks for a good base recipe.

Chocolate Chocolate Chip Cookies I

WOW!!!! These are AMAZING!!!! We are unable to eat dairy so I've not had choc chip cookies in a long time and these didn't disappoint! I made some modifications for our allergies and these were out of this world!!!! I used spelt flour (1 3/4 c) and 1 c white 1/2 brown sugar as others had suggested. I used all shortening, and used a bag of Enjoy Life chocolate chips. I also had to bake mine for 10 minutes. THANK YOU for such an amazing recipe!!

Baked Slow Cooker Chicken

This was delicious! I skipped the foil but instead put some chicken broth in as well as some carrots, potatoes and an onion. I covered the chicken itself with olive oil, salt, pepper, and paprika and cooked this on high for 4 hours...soooo good!!

Honey Cornbread

I made a few changes to this and was pleased. We don't eat dairy so I used rice milk for the cream. I also used whole wheat flour instead of white flour. Still pretty good, but I have a feeling the version with dairy is better.

Moroccan-Style Stuffed Acorn Squash

This was the first time I'd had acorn squash and I wasn't disappointed. I omitted the butter/brown sugar since we don't eat dairy and I also used chopped apple instead of celery since I didn't have any on hand. I added extra garlic and cumin and used whole wheat couscous. A good base recipe- I think next time I'll add some toasted almond slices, maybe some shredded chicken too.

Blueberry Zucchini Bread

Fantastic with a few changes: 2 c whole wheat flour 3/4 c spelt flour 1/2 c apple sauce 1/2 c oil Baked muffins for 25 minutes and they're wonderful!
