Grilled Mustard Potato Salad

Chicken and Cold Noodles with Spicy Sauce

I had a bunch of leftover linguini from a catering gig that was pretty bland (had oil and sun-dried tomatoes on it) and was looking for a good use. This worked out great and tasted just like the sesame cold noodles I get from Chinese take-out. I totally agree with lovemymutts' review - I skipped the chicken. This could use a touch of sweetness, so I think the natural peanut butter would do the trick (or a mix with tahini). I also toasted some black sesame seeds and threw them in, and subbed sriracha sauce for the chili oil, as I did not have any.

Curried Tofu Salad

So good and healthy! So many flavors going on. Like one reviewer says, you can add in just about anything - I added some baby radish that I had to use up, which ended up being a good counterpoint to the sweet floured dates I used. I also actually grilled my tofu in my stir fry grilling pan, and I think it came out similar to baking. Next time, I'd like to try marinating the tofu in the sauce first for extra flavor.

Taco Casserole

This was pretty good for this type of dish, and most importantly, very easy. I made it easier by using what I had on hand - canned chili (without beans) instead of the ground beef and soup, and salsa instead of diced tomatoes. I'd make it again - it's nice for a hot meal in a pinch!

Irish Canadian Beef Stew

I was able to use a nice hunk of leftover roast beef for this, which was already seasoned, so I didn't need the additional s&p. Didn't have the turnip, so omitted it, and I also only had Guinness Black Lager on hand, so used that and it turned out great!! This will become my go-to beef stew from now on - better than at the Irish pub!

Gorgonzola and Wild Mushroom Risotto

Muffaletta Pizza

I totally dug it! I subbed out the prosciutto with ham and also added a splash of bottled pepperoncini liquid to the olive mixture, in hopes of blending the flavors quicker. I burnt the crust during the broil, though, so keep a good eye on it after the first 3 minutes. Fantastic - I can't wait to make it again!

Pumpkin Chipotle Pasta Sauce

I thought this had really nice, balanced flavor. I only used 2 very small chipotle peppers with minimal adobo sauce, because I didn't want the heat to overpower. I did taste the cinnamon and it complemented the pepper not unlike a mole flavor, and I really liked how the pumpkin in this recipe did not slap you in the face. Served it over whole wheat gnocchi and sprinkled it with crumbled queso fresco. Brilliant!

Best BBQ Rub in Texas

On it's own, it seems quite a bit sweeter than I am used to. I did add several big dashes of hot sauce. I was almost 1/2c short on the maple syrup, so put the rest in as honey, full disclosure, but next time I will try cutting the amount of brown sugar. I am waiting to see what my brisket tastes like with the sauce - I may change my mind.

Wasabi Mashed Potatoes

I followed the reviewer's advice who mixed wasabi with sour cream (1-1 1/4T wasabi to 1/2c sour cream) and then stirred into the potatoes. I did also use some butter, but only 1 stick. I think you could get away without it if you use sour cream (or you could probably use margarine instead), but I do like the added richness, and I don't often eat mashed potatoes, so I splurged this time. I also did not bother roasting the garlic.

In-a-Pinch Ketchup

I ran out of ketchup making BBQ sauce and wondered if I could make do with something else I had on hand and looked up ketchup on this site, and lo and behold! I decreased brown sugar to only 2T, but I think 3T would be the max for my palette. I also doubled the molasses - not sure how much difference that made but it turned out quite well. I let it simmer longer, trying to thicken it up, because it is a bit thinner than store bouqht. Thanks for helping me out of a jam! Maybe I'll use this more often than the Heinz - it was easy enough to make.

This is the BEST BEST BEST and SO EASY!!! Fall off the bone - just add your favorite BBQ sauce to top your sandwich (the Western Carolina Vinegar BBQ sauce recipe from the Allrecipes site works great, if you like the vinegary style, and even Heinz 57 works for me!). If you like pulled pork, you'll LOVE this version.

Creamy Carrot With Curry Soup

I used the suggestions of adding the cinnamon/nutmeg/pepper/cumin mix and substituted 1 can of coconut milk for the half-and-half. I thought it was pretty good, but still missing a note on my palette - so I blended in about 1/4 c. of roasted pistachios. It was nice, but OMG, after it sat in the fridge for a day, it was AWESOME and wasn't missing anything, so I would highly recommend making it in advance and then reheating. This will be a definite staple in my soup repertoire!!!

Creamy Chicken and Rice Soup

I added 3 carrots chopped and 3 garlic cloves to recipe. Start by sauteeing veggies in 1/4 stick of the total butter used (I reduced to 2 sticks) and then add rice (1 1/2 c.) and sweat them a bit in up to 1/2 c. sherry or madeira. I only used about 5 c. of the milk, and did not use bullion or water - instead used 5 c. chicken stock and at the end, seasoned soup with poultry seasoning, salt and pepper to taste.

Pear Vinaigrette

Awesome! I would not use canned pears for my taste, like some others did. I prefer the less sweet dressing I had from my over-ripe pears. I did not have white balsamic vinegar, so used white wine vinegar instead, so as to keep the color light. It was fantastic.
