I love to cook! Note I said cook, not bake but I'm working on that :). We're out and about a lot so most of what I cook either needs to be quick or I need to be able to prep it the night before. We recently got a roaster so cooking in that is our current obsession!
My favorite things to cook
Anything on the grill or in our roaster. Mexican food, Greek food or anything that is quick and somewhat healthy
My favorite family cooking traditions
My husband and I frequently will have a glass of wine and make dinner together, those are my favorite nights! My mom and I also have a cookie baking day every holiday season which is super fun!!
My cooking triumphs
I finally figured out how to bake perfect brownies in our gas oven!! I also love anytime my husband asks me to make something again, I consider that a HUGE win :D
My cooking tragedies
I recently switched from an electric stove/oven to a gas one so there have been a few. I also have set the BBQ on fire maybe more than once... And the first time I tried making clam chowder I used condensed milk instead of evaporated milk...

Breakfast Enchiladas
I used this as a baseline, I halved it and used chorizo and jalapeños instead if ham and chillis because that's what we had available. Ithad amazing flavor and my fiancé even had seconds which is rare for breakfast :) So I will definitely be making this again!! Just remember if you put foil on for the 1st 20 minutes remember to bubble or tent it or you'll lose half of your cheese ??

Pot Roast in Foil
I was super excited after reading the reviews, I followed the recipe exactly with out any add ons, and was very disappointed. The meat came out super bland, dry and tough. My husband is pretty tolerant of most of my kitchen experiments but he actually asked me to go back to my normal recipe and not make this again :(

Buffalo Chicken Wings III
I used chicken strips instead of wings to try a boneless option and they turned out absolutely AMAZING!!!! Everyone loved them!
