Southern Baked Yellow Squash

I enjoyed this. I cut the squash into a smaller dice, maybe 1/2 to 3/4 inch, and did not cook it beforehand. I just mixed the diced raw squash with the other filling ingredients, and covered the top with crushed Ritz crackers/melted butter. I covered it with foil for the first half hour, then uncovered it for the final half hour, and the crumb topping was perfectly browned. I will definitely make this again in the future.

Aussie Chicken

I followed someone else's suggestion and marinated the breasts in Worcestershire sauce, lime juice and garlic for about 30 minutes before the seasoning salt step. I skipped the mushrooms, just out of personal preference. The only other change I made was to use a store brand of "smoky sweet onion mustard" instead of traditional yellow. This was easy, smelled delicious while cooking, and was very tasty and juicy to eat. I will definitely make it again.

Molasses Sugar Cookies

Perfection; I didn't change a thing. I used a Pampered Chef scoop, the medium-sized one, and baked 9 minutes, making 52 chewy cookies. Absolutely wonderful and I will use this recipe forever.

Chantal's New York Cheesecake

Perfection. I made sure the ingredients were room temp, and put the pan in a water bath. Absolute heaven. We couldn't wait to try it; I made it last night and here we are eating it for breakfast! This is my new go-to cheesecake recipe. Thank you!

Potato Cake

I've been making these for years; we love them with fried eggs for breakfast. It never occurred to me to use cheese, though, until seeing this recipe. What a great idea! I'll do that next time. The only thing I do differently is to add a little onion powder and some parsley to make it pretty. I don't think I fry mine quite as dark as the photo. Delicious recipe, thanks for sharing it!

Pumpkin Cream Cheese Muffins

Oh my goodness; I am in muffin heaven. These are fabulous. After reading a bunch of the comments, I did add some additional spices to the batter, just eyeballed in some cloves, allspice and a tiny bit of ginger. I use Pampered Chef scoops, so I used the medium sized one to put the batter in the cup. Then I used the small one to put in the cream cheese filling, and another medium sized scoop of batter on top of that. It baked up fine, with the filling right in the middle. For the streusel topping, I used half white and half brown sugar. They baked perfectly in exactly 20 minutes, and it made 21 muffins for me. My daughter and I can't keep our hands off them! This recipe is a keeper.

Creamy Chicken and Rice

Simple to make. I didn't have a lot of cheese on hand so I also added a can of cream of mushroom soup, just to be sure it had enough flavor. It was very creamy and rib-sticking and the family liked it.

Apple Cake I

This was very good and so simple to prepare. After reading all the reviews, I did substitute 3/4 c. melted margarine for the oil, and used brown sugar in place of half of the white sugar. I also spiced it up just a bit, with a pinch of nutmeg and cloves. My apples were Red Romes, and they did very well in this. I made a glaze of powdered sugar, milk and vanilla, and just drizzled a criss-cross pattern over the top. I will definitely make this again. Update, next day-omigosh, this is even better! It seems even moister and the flavors have blended beautifully.

Potato Leek Soup III

Delicious! I added a clove of garlic, pressed, at the same time I added the potatoes, just because I'm a garlic lover. Other than that, I followed the recipe as written, and it was both easy and very tasty!

Old Fashioned Apple Dumplings

I made these today, and they turned out great! The only thing I did differently was to substitute a cup of apple cider for one of the three cups water, just because I had it in the fridge and thought "why not?" It made the syrup a little darker, which was nice-looking. I divided the dough into 6 portions before rolling it out, to make it easier. I wouldn't change anything about this recipe.
