Cheesy Ranch Potato Bake

The family loved these! I made just a couple modifications. I used 2 bags of frozen cubed hash browns and just let the bags thaw on the counter for an hour or so before mixing with the seasonings. Added 1/4 c green onions, chopped and 3 T of real bacon bits. Also, used 3T butter and a few drizzles of olive oil. Then because the of using the hash browns just let it bake 30-35 minutes before adding the ranch and cheese. Everyone went back for seconds!

Asparagus Wrapped in Crisp Prosciutto

These were super yummy. I tossed the aparagus in the evoo and garlic powder then I wrapped 4-5 spears in each slice of prosciutto, as "serving buddles". Mostly, because I didn't have enough to do each spear and was making as a side rather than an appetizer, but it worked really well. Still had a very nice flavor without getting too salty. New favorite asparagus recipe! Thanks

Drunken Grilled Asparagus

Followed the recipe exactly and it was ok.....I love asparagus but for some reason this didn't trip my trigger. The flavor of the red wine seems odd with the asparagus. A white wine might have been better for me than the red. Liked the idea...may try again with a white wine and dijon mustard.

Roasted Asparagus and Yellow Pepper Salad

Really liked the idea but I modified it a bit and really enjoyed it. As others suggested I tossed the cut asparagus and red and yellow peppers in olive oil and threw them in my grill basket. Used about 1/4 of a large red onion. Made only about half the dressing and added couple tablespoons of red wine vinegar. Cut back on the mustard and hot sauce too. Still had a lot of flavor and the grill flavor really helped too. Will do again. Thanks for the starting place for a yummy healthy salad.

Spinach and Blue Cheese Soup

Who would've thought to put blue cheese and spinach in a soup?!?! It was delicious! Followed the recipe pretty closely only using fresh spinach, switching evap milk for cream and just sprinkling real bacon bits on top upon serving. And I didn't puree. Would've liked to see it thicken a bit more. Might up the flour some next time.

Easy Asparagus

I probably make this once a week. It is one of our very favorite recipes. The only think I do differently is to add some real bacon bits to the onions, and I don't use the cracker crumbs either. But this is quick, easy, healthy and very yummy. Thanks for sharing!

Blue Motorcycle

Was looking for blue drinks for my Superbowl party. This is ok but needs a bit of tweaking. Too much alcohol to amount of mixer for me and I love Long Islands. Increased the sour and Sprite and that helped. Pretty color blue though! Thanks.

Summer Sausage

Made to the recipe. Had never made summer sausage before so I pretty much had to. My husband raved! He will be making sure I make this again. Would make great hostess or small gifts around the holidays. You can be sure no one else will be giving homemade summer sausage, but take the recipe because you'll be asked!

Karyn's Cream of Crab Soup

Wow...expected this to be good but it was wonderful! It took some other reviewers advice and added some celery and onion, also used 3 cups half and half and 2 cups milk for calorie's sake. It was still very rich. Don't go to all this trouble and skimp on canned crab. Get the fresh crab in the tubs in the seafood department.

Sophie's Zucchini Bread

I made this recipe as muffins and they did not stay around long. Everyone loved them. My only modifcations were similar to others. Half white, half brown sugar. Then I used 1/2 cup oil and 1/2 cup unsweetened applesauce. Cuts the calories a bit but doesn't compromise the moistness.

White Chocolate Macadamia Cranberry Dreams

Yummy! Based on other reviewers and my personal preferance for a denser cookie, I added 1 cup of oatmeal that I had put thru the blender so that is like flour. Also added some OJ, orange zest and more craisens and vanilla baking chips, omitting the macadamia nuts. They are very pretty and very tasty!

Chicken Andouille Gumbo

Yummmy. Had to add an onion! And used the oven for browning the flour, worked very well. But was afraid of burning the flour so used 375 and only went for 30 mins or so, stirring between 5 and 10 mins. The whole thing takes a while and several pots but was worth it!

Not Your Every Day Smoked Pork Spare Ribs

Yummmmy! Followed the rub recipe except for the omission of the cinnamon. (I'm sure it's good....I just can't!) And just sprayed them in the smoker with some apple juice instead of the mop sauce. Falling off the bone tender and yummy bark and meat flavor. Also put some of the rub on some chicken breasts and cooked them on the grill. Those were very good also!

Blue Cheese Crusted Filet Mignon with Port Wine Sauce

Made this for my hubby's birthday. We usually go to an upscale steak house for his birthday. He said this was as good if not better than a $50 steak there. Followed the recipe exactly. Highly recommend the use of a digital meat thermometer....cooked them just perfectly medium rare with that. I used a cast iron grill skillet(it has raised ridges on the inside bottom) and seared them and then just put the whole skillet in the oven. Got gorgeous grill lines on the steaks! And is much easier to clean. Served with the garlic mashed potatoes as recommended and it was a wonderful meal.

Uptown Cowboy Caviar

My family LOVES this! I had been making a version that uses bottled Italian dressing for years. I love this recipe's dressing...so much fresher and lighter. I do cut back the olive oil and sugar to 1/4 c. I prefer red onion. And I don't use celery or pimento. I suggest adding 1/2 to 1 t of cumin to the dressing. It really gives bit of zing without being overtly spicey. Everytime I take this somewhere new I get asked for the recipe!

Baked Asparagus with Balsamic Butter Sauce

Very good asparagus! I agree with those that switch quantities of soy and balsamic. I added a couple cloves of garlic and a shake of red pepper flakes to my butter. They added a bit more dimension to the flavors. This is a frequent flier at our house!

Broccoli and Ramen Noodle Salad

We enjoy this quite frequently. Easy, tasty way to add broccoli to a meal. I prefer using rice vinegar to the apple cider. Seems to taste fresher. My only addition is that I add one of the seasoning packets from the noodles to the dressing. I don't use the peanuts. Sometimes I add a small canned of mandarin oranges, drained.

Italian Vegetable Soup

I added this to my recipe box a month or so ago and have already made it twice. Vegetarians and carnivores both love it. I added a large can of tomato sauce and an extra can of kidney beans. I omit the pearl onions and chop and sauté an onion with the celery, carrots, and some garlic in a bit of olive oil. I leave out the zucchini just because I think it starts looking kinda sad on reheating the soup. If your carnivores insist on meat, slice and cook some chicken sausage Italian sausage in another pan and them have them add it their bowls.
