Microwave Pecan Brittle
Ingredients are spot on. Changed the cooking time to reflect larger microwave. I have a 1200 watt 1.2 cu ft Panasonic inverter microwave. Cooked the sugar and syrup 3 minutes on high. Added pecans and cooked another 3 minutes on high. Added butter, vanilla extract, and baking soda and stirred vigorously until well combined. Did not cook any more, poured into prepared baking sheet and let cool. Turned out perfect. Edit: Made again and cut the cooking time after adding the pecans to 2:30 instead of 3:00 minutes. It was good before but had a bit of "toasty" taste. It set up fine and tasted better.

Orange Dipping Sauce for Coconut Shrimp
Really good. Served with chicken tenders. Made as per recipe only used home made kumquat marmalade instead of orange marmalade.

Baked BBQ Meatballs
Made recipe as written except replaced the 3/4 tsp salt with 1-1/2 tsp Tony Chachere's Creole Seasoning and baked in a 13 X 9 pan. I used high fat ground beef (all I had on hand) so there was a lot of fat rendered out. Removed the meatballs to another dish, poured the fat off the sauce and then spooned the sauce back over the meatballs. Turned out really good -- will definitely make again.
