Beet Surprise Cake

Note for chefs like me who must cook for beet haters: If your picky eaters know there are beets in the cake and eat the plain cake, they will be able to taste the beets. However, if they don't know there are beets in the recipe and with the frosting they will not be able to tell. The texture of the cake is lovely. I didn't have powdered sugar so didn't make the frosting and instead had my eaters frost their own cupcakes with the store bought cream cheese frosting.

Cranberry Hootycreeks

I have made this recipe numerous times and I gave it for Christmas. One of my friends said it was the best cookie recipe she had ever had. I had my reservations about mixing everything together in one bowl, but it turned out fine. I now keep a mix in a ziplock back in my fridge at all times so that I can have cookies whenever the urge hits! Just make sure that your butter is very soft.

One Bowl Brownies

I believe this recipe is from the box of the baking chocolate. The recipe is reliable but doesn't provide the really rich, really moist brownies that I prefer.

Spiced Mixed Nuts

The final product is very good. What is missing from the recipe is that you need to let the nuts dry for a long time (several hours) before they harden. I made this only a couple of hours before a dinner party and the nuts were still wet when guests arrived.

Lemon Cream Cupcakes

These were just OK. I could've used more lemon flavor. I found the cupcakes a little dense - the cake batter is basically a pound cake recipe. The frosting was too sweet compared to the mild flavor of the cake. Also, my frosting turned out to be a goopy mess so I had to serve my cupcakes with a fork and with the frosting drizzled over them.

Peanut Butter Bacon Cupcake

I'm not sure why other reviewers have said these are complicated. I cooked the bacon in the microwave. The bacon grease adds fat to the cupcakes but not flavor, so next time I would use canola oil to be a bit healthier. The icing recipe does need to be halved, and instead of heavy cream you can just use whatever type of milk you have on hand. I love the peanut/bacon combo and the saltiness is a nice way to counter the richness of the peanut butter. However, I think the texture is weird - a cupcake that has crunchy bits of peanuts and bacon in it. For next time I would try to figure out a way to make a cookie out of this flavor combination rather than a cupcake.

Cardamom Banana Bread

I made this recipe because cardamom is my favorite spice. The result was OK but a little weird tasting. My banana bread has a bitter aftertaste, I think because of so much cardamom. As much as I love cardamom, I just don't think it works in this recipe with these flavor combinations. I would make this again but with cinnamon and nutmeg instead.

Easy and Simple Korean BBQ Ribs

Amazing! Had "regular" beef ribs, not the special cut. Didn't have green onions or sesame seeds. I was skeptical about a recipe with 4 ingredients (soy, sugar, garlic, sesame oil) but these were delish! Hubby didn't stop raving! We did the ribs in the crock pot but this would be great grilled. Also would be an excellent marinade for flank steak.

Mocha Bundt Cake

Very nice cake. I only used 1 1/2 cups sugar and found it to be sweet enough. I also used whole wheat flour with no problems. I omitted the glaze. Cake is amazing on its own or with a bit of vanilla ice cream.
