Eggplant Parmesan II

Delicious! I recently became vegetarian and this dish is going to become a favorite for sure. After reading some reviews I sliced the eggplant very thinly and baked at 450 for 6 minutes, flipped, then baked another 6 minutes. I ended up with 3 layers of eggplant.

Lime Chicken Soft Tacos

I made no changes to the recipe other than that I added the vinegar and everything after only 10 minutes of sauteing and it was perfect! LOVE this recipe. People definitely need to try it as posted because it is great with the green onions and oregano. I topped it with cheese, lettuce, tomatoes, sour cream and salsa. YUM!

Delicious Ham and Potato Soup

I boiled the potatoes, celery, onion, ham and water mixture for 15 minutes, used black forest ham (yum), omitted the salt due to enough of it in the chicken bouillon, and used 6 chicken bouillon cubes (because i didn't have granules). Next time I will use a little less butter because that taste was a little overwhelming and the butter is the source of pretty much all the fat from this dish. I'll be serving this again sometime soon. :)

California Grilled Veggie Sandwich

I don't have a grill so I chose to broil as another user suggested. I spread a tablespoon of olive oil across a baking pan and rolled the vegetables around in it prior to broiling. I broiled 3 minutes, rolled them, and broiled another 4 minutes and they were perfect. These were so tasty and so easy to make, I will definitely be serving them again.

Eclair Cake

I have made this about 5 times now and every time is a different flavor combination: oreo pudding with dark chocolate frosting, chocolate chip vanilla pudding with coconut pecan frosting, caramel chip chocolate pudding with birthday cake frosting, etc.. The possibilities are endless and it is always so tasty and easy! I recommend refrigerating for 2 hours before eating.

Herbed Chicken Omelet

I didn't quite follow the recipe fully but these still ended up tasting great. I used chicken marinated with Stubb's Chicken Marinade, 1 teaspoon of dried parsley because I didn't have fresh,celery salt instead of celery seed and then cut back on the salt used, and I didn't use tarragon at all. Despite these differences, the meal still ended up being quite tasty with some fresh pico de gallo on top.

Chicken Enchiladas II

Delicious! I added a 1/2 teaspoon of cumin and an additional green onion. Unfortunately didn't have sour cream and used 1/4 cup mayonnaise and it worked wonderfully. I strongly suggest doubling the sauce because there wasn't much to fill the enchiladas with.

Stuffed Peppers with Turkey and Vegetables

I didn't use spinach but followed the rest of the recipe to the T. The peppers were still hard after the initial 15 minutes of baking so I spread olive oil across the skins for the second baking and this softened them up a little, but were still a tad too hard to bite into when finished. The peppers were very wet inside and quite bland. I would recommend adding some cheese to the mixture to help hold to peppers together and some spice to give it some taste. Better luck to others!

Fish Tacos

A little too spicy with the cumin, cayenne, jalapeno combo. The second time I made these I halved the cumin and cayenne and used only a third of a jalapeno. This made the spice manageable and I have repeated this revised dish multiple times since. Delicious!

Farmer's Market Vegetarian Quesadillas

These were great with salsa- even my meat-loving man said it was tasty. The only change I made was splitting the filling between two quesadillas, rather than three. This made the quesadillas thicker and more filling.

Stuffed Peppers My Way

Absolutely wonderful! I've made this dish over a dozen times already and it has never failed to impress. The only changes I make are to use 3 green onions and to mince 1 clove of garlic for the spice mixture. I also only leave the peppers in the oven for 20 minutes. Outstanding! :)
