Spaghetti Pie I

Ok--first off, this recipe is great for leftovers. i butter and season the cold spaghetti with butter, garlic, salt, pepper, oregano, parmesean, then warm it in the microwave. I also mix in some sauce so its not so dry. instead of beef, i used left over chicken parm cutlets sliced up into bit size pieces. i also omitted the cottage cheese and the ricotta and just used a shredded italian blend. delicious!

Quick and Easy Chicken and Tomato Pasta

My father in law calls this Chicken Goulash. Its delicious. I tend to use peppers, onions, garlic, carrots, celery. Whatever I have on hand. Check out my pic.

Manhattan Clam Chowder

My first attempt at making Clam Chowder. I think it could be a bit thicker. I basically doubled the entire recipe..used two cans of fire roasted diced tomatos, more potatos, and i took the advice of the chili pepper seasoning and the bacon. Serve with some oyster crackers or saltines. Really great way to use up the clams before they go bad and have lots to share with your friends.

Southwestern-Flavored Ground Beef or Turkey for Tacos & Salad

this is really good however I do agree that 3lbs is a bit much. I would use 1.5lbs of either ground turkey or ground beef. another thing, you can do without the cornmeal. tacos are fun and easy, the key is to pre cook the taco shells, then dress the tacos with your fixings, top with cheese and bake again until cheese is melted. top with sour cream-delicious!

Rotini with Broccoli

I make a similar dish--I use less lemon juice, another can of chicken stock, a can of diced tomatoes, half an onion-diced, along with alot of garlic, adobo, and my favorite blend of seasoning...Very delicious! You can use anykind of pasta-rotini, bow ties, penne, doesnt work well with spaghetti though. I love this because its a ONE POT DISH!!! Check out my pic.

Green Chili Stew

very good. similar to what my mexican mother-in-law makes. I (She) uses ground beef instead of pork. you can also use some beef stock if it seems to be a bit dry. Delicious...check out my photo with the beef. I love this dish because its a ONE POT MEAL!

Fiesta Stuffed Peppers

people are right, the recipe is kind of bland. I altered it a bit by browning the meat (ground turkey) adding lots of mexican style seasonings, and a can of diced chilis. I used half the amount of rice and more salsa. top with cheese...yummy!
