About me....hmmm...I love to cook! I grew up cooking with my dad and we made a family recipe book that we refer back to over the years. Once in college and out on my own, I taught myself to cook by watching alot of Food Tv and found this wonderful site called I love food, I love cooking, I love to try new things. I also love to put my own spin on recipes and am often complimented (and recipes requested) on my dishes. :-) Feel free to ask me anything, I enjoy reading reviews and seeing the different spin others put on dishes.

Now that we're older, every one brings a dish to family dinners and parties. I love cooking with my dad and I love it when my brother and husbnad challenge me or tries to show me up. :-) haha! They do a good job at that.
My cooking triumphs
Being creative. I love to open the fridge, cabinet, and pantry and come up with something edible and fantastic!
My cooking tragedies
1.) tried to mimic an Olive Garden dish...not good. 2.) blew up a glass baking pan and destoyed my homemade sauce--went everywhere. 3.) Ill let you know when it happens...

Spaghetti Pie I
Ok--first off, this recipe is great for leftovers. i butter and season the cold spaghetti with butter, garlic, salt, pepper, oregano, parmesean, then warm it in the microwave. I also mix in some sauce so its not so dry. instead of beef, i used left over chicken parm cutlets sliced up into bit size pieces. i also omitted the cottage cheese and the ricotta and just used a shredded italian blend. delicious!

Quick and Easy Chicken and Tomato Pasta
My father in law calls this Chicken Goulash. Its delicious. I tend to use peppers, onions, garlic, carrots, celery. Whatever I have on hand. Check out my pic.

Manhattan Clam Chowder
My first attempt at making Clam Chowder. I think it could be a bit thicker. I basically doubled the entire recipe..used two cans of fire roasted diced tomatos, more potatos, and i took the advice of the chili pepper seasoning and the bacon. Serve with some oyster crackers or saltines. Really great way to use up the clams before they go bad and have lots to share with your friends.
