Chicken and Ham Casserole

I get amused at the reviews. Some change them so much that there is littleof the original left. I substituted the equivalent of !/2 package of leftover cheese mac with burger for the noodles, added cream of chicken soup for the sauce, left out the chicken, added sauteed onion and broccoli and celery, topped with cream of chicken soup and Panko bread crumbs, shredded cheddar,ample pepper and paprika, baked in medium dish for 30 minutes then a little longer, then served. Everyone liked it. Wonderful recipe. Thanks so much.

Barbeque Pork Two Ways

I used a 2.5 lb pork roast. Thought 2 cups ketchup seem a lot, but used 1 1/2 plus 1/2 cup barbeque sauce. Family members liked it, but was too rich for me . It's easy and good, but I'll use about half as much ketchup and sauce next time.

Spicy Rapid Roast Chicken

I had a 4 1/2 lb bird, so intended to give it 30 min plus 60 min, and then changed my mind. Used 25 and 50. It turned out very good! Browned enough, moist--I left it breast down for the first 25 min, then upright. No problem. Spiced and rubbed as the recipe recommended. Was in a hurry, and was well pleased.

Zesty Tilapia with Mushrooms

Followed this recipe almost exactly (joke). I followed another reviewer, and used 1 lb of sliced white mushrooms, sauteed until dark and good,, pushed them aside and browned the floured tilapia in a bit more butter, added salt, pepper, garlic, garlic powder, lemon juice, served with asparagus stir fry, and had the nerve to rate this recipe!! I'm sure it was savory and good. At least, it gave me the basics.

Baked Pesto Chicken

Didn't have enough chicken breasts on hand, so included two fileted thighs. Marinated the meat for four hours, and otherwise followed the recipe. I ate one of the breasts, while my wife, who prefers dark meat (as so I) ate a thigh. She commented that it was some of the best chicken she had ever eaten. Surprised and pleased, I gave it a five. I didn't feel so strongly, but it was very good, served with baked acorn squash and a tossed salad.

Eva's Savory Turkey Legs

Turned out real well. I used a stove top stuffing, but added herbs and spices as per recipe. Cut slits in the legs and stuffed chopped onion. Baked at 400 F for one hour, and everything was well done and succulent. Served with baked sweet potatoes and cranberry sauce. Easy and very welcome as an alternative to other meats and fish.

Very nice and easy. I used boneless thigh pieces, as we prefer dark meat. Followed the prep, but for myself, I need to work on getting a bit more flavor. Also, the grilling time needs to be watched. For us, it was much shorter.

Grilled Tilapia with Mango Salsa

I was disappointed. Followed the recipe closely, for three fillets. The salsa seemed totally unrelated to the flavors of tilapia (which broke up on the grill). I like tilapia, I like mango, but will use them other ways

Zucchini Bread IV

I used 1/2 cup of apple sauce in place of 1/2 of the oil, 7 tsp of sweetener in place of 1 C of sugar. otherwise followed closely. I didn't peel the zucchini, and found that to not be a problem. Also, used wheat flour for half of the requirement. Even with these changes, it came out great, moist, tasty, and a great way to use zucchini. Will chop and freeze some zucchini to use later. My first effort, and am quite happy with it.

Melt-In-Your-Mouth Meat Loaf

Very good! I followed almost exactly, except had 2.3 lb package of 80-20, and used it all. Drained some fat after cooking. Used a fresh onion (no other on hand.) Hadn't made a round loaf before, so made a hole in the center, like in an angel food cake, for even heating and cooking. Cut servings like cake slices. Everything worked out just fine, and is surely an easy way to get ahead and have supper waiting. Oh yeah, almost forgot. I used only one tbsp of brown sugar. It's an excellent, mild sauce--leaves some flavor for the meatloaf, itself.

Brooklyn Girl's Penne Arrabiata

Just fine! Left the sauce ingredients all the same, except added a tbsp of chicken soup base (Watkins) for balance over the tomato taste. For breading, used egg coating and Shake 'N Bake. Worked just fine. I used boneless, skinless thighs instead of breast meat, because we all prefer dark meat, and left them in large bite-size pieces. Everyone praised it as different and very good. Will keep the recipe handy.

Halibut Weaver

This was an easy recipe, and went well. I prefer crunch-fried fish, but my family enjoyed it this way. I used Tilapia fillets, and they were very good. No problems in following the recipe and the times. I might have preferred it a little less cheesy, but it came out well done, and very attractive.

Quinoa and Black Beans

I recovered it and it came out well. It needs twice as much liquid as suggested. I cooked it carefully, and added water as needed--about two more cups. I used one can of black beans in order to appreciate the quinoa and cilantro more fully. Found plenty of quinoa locally at Whole Foods, in bulk, at $3.76/lb. My Mexican friend, especially, was surprised and pleased with it and gave it a full two thumbs up!! I repeated it a second evening. Will offer it frequently.

Pizza Dough I

This just went like "clockwork". Made the dough as directed, spread it immediaately, topped with a canned pizza sauce, home-prepared sausage and mushrooms, and baked it right away. Very good, no problems, well received. I will try different sauces, to try to find a favorite.

Easy Mexican Casserole

I made it according to recipe. Wife and friend enjoyed it much, however I was a little disappointed. Not the fault of the recipe, just that I found it lacking in the sense of really good TexMex food. Can't think of what I would change, other than perhaps a more flavorful salsa. Maybe the addition of some chili powder. It didn't "zing".
