Warm Blueberry Sauce

This is a yummy basic sauce, and easily adaptable for other kinds of fruit. I've made strawberry and peach versions as well as the blueberry. I don't like Splenda, so I just used about 1/2 c. of plain old sugar. I also swapped vanilla extract for the almond extract, as I find the almond extract flavor a little too strong for my tastes. I originally used this sauce to spoon over slices of a lemon yogurt cake, but it's also fabulous with pancakes and ice cream. My husband even added some to a smoothie and loved it.

Whipping Cream Pound Cake

Delicious and moist. I halved the recipe and baked in it a loaf pan (had to bake for about 75 minutes to get done in the middle). I served slices with a spoonful of canned cherry pie filling and a dollop of Cool Whip on top. Would be great with strawberries or a drizzle of chocolate as well! A versatile cake that I'll definite make again!

Baja-Style Fish Tacos

Tasty! Even my picky six-year-old stepson loved the fish (I left out the tequila, obviously). The coleslaw dressing was so good, I plan to make it again and use it as a dip for fresh veggies.

Chocolate Zucchini Bread II

Delicious! I've been looking for some creative ways to use an overabundance of fresh zucchini from the garden, and this was perfect. Even my picky eater two-year-old loved it.

Ladyfingers

I wanted to make a tiramisu for a special dinner I'm hosting for some girlfriends, but couldn't find ladyfingers anywhere. I was a little intimidated about the thought of making them myself, but these were much easier than I expected. Simple ingredients everyone has on hand, just takes a little time and care to mix the batter. Mine didn't rise very well (it's a hot day here and I chalk it up to the batter not staying cool enough). I piped them using a big Ziplock bag, which worked like a charm. My ladyfingers came out a little flatter than those pictured here, but tasted light and delicious! Will definitely make again, can't wait to see how they turn out in my tiramisu and I know my friends will be impressed!!!

Cookies 'n' Creme Fudge

I'm not a huge white chocolate fan, but this is delicious and super easy to make. I'll look forward to experimenting with different kinds of cookie crumbs for new flavors - maybe some gingersnaps or nilla wafers?

Pumpkin Chocolate Chip Muffins

Very tasty muffins, my only issue is that they are sticking to the papers when I try to unwrap them! Good pumpkin flavor and good ratio of chocolate chips. I cut back a little on the cloves and nutmeg because I tend to find them overpowering, used more like 1/8 tsp. instead of 1/4. I also used mini chocolate chips and made mini muffins, baking for 13-14 minutes. Will definitely make these again.
