Healthier Downeast Maine Pumpkin Bread

I have made this recipe two times now ( I forgot I had made it once already). The taste is ok, but I think the bread comes out with no complexity at all-complete Wonder Bread texture. I left out the raisins and pumpkin seeds so maybe I need to add something interesting next time, but it is absolute mush. Just not a fan. Maybe I am doing something wrong-I added molasses, as I always do to my pumpkin bread, or maybe it is where I live-high altitude cooking. I need to keep looking for that perfect recipe.....

Hummus III

FINALLY! This is the hummus I have been searching for. Only change I made (and I always do this to hummus) is to add about 1/3 cup of water. It makes it mice and fluffy. Try it!!

Grandma Ople's Apple Pie

Delicious! I always cut the sugar in half in all of my recipes. I did it with this one as well. This filling with my great grandmother's crust had people begging for the recipe. I can't part with my crust recipe yet.

Spinach Lasagna III

Delicious! It is a lot of work, but it is worth it. It makes a lot so you can eat it for a few days. I add WAY more spinach than the recipe calls for. I usually triple the spinach. I also use way fewer noodles. I put 3 in a layer and it is fine.

Ginger Snap Cookies

First of all, do not add 1 Tbs. of cayenne as someone said before. They were way to spicy even for the adults. I had to throw the whole batch away. These came out very doughy. Not chewy or 'snappy'. I am cooking at high altitude, but I made adjustments. I was disappointed. I tried them three times hoping for success, but they just weren't what I was looking for.

Crustless Spinach Quiche

Delicious! It has become a house favorite. I like to make recipes as healthy as possible. I literally add 9 cups of spinach and it turns out delicious! So add all you want!

Lemony Quinoa

This is delicious!! I have made it several times and most people have asked for the recipe to cook it at home. The recipe has spread like wildfire! I change it a little bit. I don't add celery due to an allergy, but I add olive oil. I never prepare quinoa dishes without olive oil. Delicious!

Carrot Cake III

It was good, but I didn't think it had enough carrot flavor. It is more like a spice cake. But, I usually make my foods healthier than the recipe calls for. I stuck to the recipe this time. I will add more carrot next time.
