Baked Slow Cooker Chicken

I made changes, but I really enjoyed the results. I did not use the foil; my 4 1/2 pound bird was atop quartered red potatoes, baby carrots, onions and celery. I also chopped the same veggies (no potato) and stuffed them into the cavity. I blended paprika, freshly chopped garlic, sea salt, and black pepper into room temperature butter and rubbed the mixture under and over the skin. A tablespoon of the butter went into the cavity also. My slow cooker runs hot, so I cooked everything on the low setting for 5 hours. I was able to get the bird onto the platter without the carcass collapsing, and the meat was moist, flavorful and very tasty. I made a quick gravy with a flour roux and the juices from under the meat and veggies. I think that it is important to note that I used absolutely no liquid, there is no need. The meat will make plenty of juice that can be used for gravy, a quick stock, and so on. Next time - and there WILL be a next time - I think I'll switch up seasoning, maybe use rosemary and thyme. Looking forward to the chicken salad I am making tomorrow with the small amount of leftover meat!!

Mexican Bean Salad

I made this last night for a football party this evening. I took a taste and the dressing is SO tasty! I followed the recipe almost completely. Like other reviewers suggested, I halved the oil, vinegar and sugar, and I added a few extra "dashes" of Franks hot sauce. I didn't measure the minced cilantro, but once it filled a handful, I figured that was a good amount. Next time, and there WILL be a next time, I think I will add some chopped cucumber, a small amount of tomato and even maybe some celery or carrots for more crunch.

Popovers

Made this recipe this morning for my husband and my toddler. BIG HIT! I did add a few dashes of pure vanilla, I used (almost) room temp eggs and milk, and baked at 450 for 15 minutes, 350 for another 15 minutes. Also, as I saw in some reviews for popovers, I preheated the pan with a bit of butter in each cup for about 90 seconds. My husband can't wait for me to make these again next Sunday!

Icing for Sour Cream Cookies

Just made this tonight - trying a new sugar cookie recipe and needed a good, sweet icing. This icing worked beautifully! Since this was kind of am experiment, I didn't add any coloring, but I will going forward. Very tasty, sweet but not overly so. Perfect balance for my new, not-so-sweet soft cookies.

Mountain Apple Cobbler

Oh I was SO pleased with this recipe!! I reduced the butter by 1/2 a stick and mixed brown and white sugar. I also used about 1/2 a bottle of Mountain Dew vs. the whole thing. Served with Baskin Robbins vanilla ice cream. Dessert was DELICIOUS!!!

Apple Breakfast Bread

I've made this recipe 3x in the last 2 weeks! My husband and toddler are both big fans. I reduced the amount of cloves used to 1/4 tsp (personal preference) and used half light brown sugar, half white sugar. I shredded the apples and was very pleased with the amount of juice rendered; it helped the stir-ability of the batter considerably!!

Bacon Wrapped Hotdogs

Made these for football Sunday. I used a little more brown sugar, given the size of my slow cooker, and I had to switch the temperature to the warm setting after less than 2 hours. In the end, I cooked them for about 5 hours, 2 on low and 3 on warm. The bacon crisped up nicely on almost all of them. My husband and his buddies were big fans!

Soft Sugar Cookies V

Very happy with this recipe. I have been using a different sugar cookie recipe for years, and my husband asked me to find one that was "softer". I make LOTS of Christmas cookies, and I had high hopes for this recipe. It didn't disappoint. I topped it with Icing For Sour Cream Cookies from this site and it was a nice balance of a sweet topping on this cookie.

Extreme Banana Nut Bread 'EBNB'

I'm not a banana fan, but my husband and toddler daughter are. Finding myself with several overripe bananas, I sought out a BNB recipe. This did not disappoint! I used finely chopped walnuts and upped the amount to 1.5 cups. I added a tablespoon of canola oil to keep the bread moist and I threw in a few dashes of vanilla. Hubby and little girl loved the bread! Next time I think I'm going to add a few handfuls of mini chocolate chips.

Slow Cooker Beef Stew IV

Ok, this was an excellent base recipe!! I used almost all of the ingredients as written, except that I cut the onions down to 1 and swapped out the onion soup mix for a pre-mixed stew seasoning packet; my husband isn't a big onion fan. And I did use 2 cups of boiling beef broth instead of plain water. I cooked the stew on low for 7 hours, the last 30 minutes with the mixed in flour paste. The gravy thickened perfectly. My husband says this stew MIGHT be the best thing I ever cooked!!

Lemon Poke Cake II

BIG FANS!! I couldn't find lemon pudding mix, so I switched it up - used lemon cake mix and vanilla pudding. I followed the rest of the recipe exactly. The glaze ended up thicker than I thought it would, so whatever didn't seep into the "pokes", I re-spooned over the cake. It was delicious. The cake didn't last the night!!

Baked Chicken Nuggets

I cut the chicken into 1 inch chunks and soaked the chunks in milk for about 2 hours in the fridge. I also baked the nuggets on a cooling rack. Otherwise, I followed the recipe exactly. My husband and 16 month daughter LOVED the nuggets. I thought they were a little too salty but good overall.
