Texas-Style Baked Beans
I have made these a couple times now and everywhere I take them they are a huge hit!! The only thing different I use is Jone's hot sausage (in the tube) and also add a chopped fresh jalepeno. Fry in a skillet with the onions. Everything else I left as recipe stated. Oh I do recommend draining 1-2 cans of beans otherwise it is too soupy. Yummy!

Migas II
My Mexican sister in law just made this for us this past week and I also had it in a Mexican restaurant in Texas! It is so good! She prefers to fry the tortilla's until they are crispy. Drains them and then adds the eggs and garlic salt. It was so good!!The garlic salt gives it a wonderful flavor along with the tortilla's. It would be great with queso cheese on top! The restaurent made the softer version and I liked hers much better. I loved the crunchier texture. She treated us with some wonderful Mexican food and taught me how to make a lot of dishes! So happy to have her in our family!

Anna's Linguica and Potato Stew
Wow! This was so good! Can't figure out why some said was lacking in flavor because mine came out delicious! I took the skin off my sausage and eyeballed in the potatoes. Maybe about a pound. I used a half pound of bacon since there was only 3 slices left after I took the 6 slices out. I didn't have zucchini so I chopped up some carrots, and fresh baby corn and sliced mushrooms since that is what I had. I followed the directions frying in batches. I fried the carrots with the onions and 3 cloves garlic. Then the sausage and then I also cooked the potatoes to give them a head start and added the mushrooms towards the end. Added all to crock with an extra 8 oz. can of sauce . I added 3/4 cup Merlot wine. Will use the zucchini also the next time. The more veggies the better for me. Cooked on low at first but then cranked it up on high until done and everyone raved how good it was. The baby corn stayed crisp and it was so good. Followed all the other ingredients. This is one of the best stews we have ever had!! It's a keeper! Yummy! Thanks for posting!
