Chewy Chocolate Chip Oatmeal Cookies

These cookies taste great! I only gave them 4 stars because I took other people's advice and increased the flour and decreased the oatmeal and salt. The cookies spread out during baking so I will chill the dough before baking next time (and there will be a next time!)

Delicious Chicken Casserole

Tasty recipe! I only used one can of cream of chicken soup because I didn't read the ingredients properly. But I thinned it out a little with milk and we never missed the extra soup. Will definitely make again!

Thai Pineapple Chicken Curry

We didn't care for this, but I didn't have all the right ingredients either. I couldn't find curry paste or bamboo shoots and my grocery store, so I made a paste from curry powder, garlic, cayenne, a squirt of lime juice, a pinch of brown sugar, onion powder, and coconut milk. I subbed bean sprouts for the bamboo. It was pretty bland tasting, but maybe if I had the right ingredients it would have been better.

Peanut Butter Bars I

Good, but rich. The graham crumbs in the crust threw me off a little since I was expecting a creamier consistency (like a Reeces). Would make again though.

I followed other's suggestions and doubled up on the herbs and I thought it was a little too much. I think even if I had followed the instructions exactly it would still have been just an ok recipe for us.

Spanish Flan

I just threw all the custard ingredients into the blender and gave it a whirl. My husband says it is just like our favorite Mexican restaurant's flan. Just what I was looking for!

Tropical Grilled Pork Chops

This is a great recipe! The salsa is a little bit of work, but well worth it. I substitued coriander seeds for cardamom because I didn't have any. I made the salsa the day before and marinated the pork for about 24 hours and it turned out tender and juicy.
