Arkansas Green Beans

Cooked this for a dinner party and it was a big hit. I did half the sugar and tear the bacon into pieces rather than laying the strips of bacon across the beans.

Easy Chicken Satay

This recipe rocks! I made this for my husband and I and we both fell in love all over again! We grilled the chicken on the grill on kabob sticks and I used the same marinade recipe for the yellow squash I made. There was plenty of peanut sauce left over that the next day, I chopped green peppers and onions, sauteed chicken in half of the sauce and then threw in the veggies and some ginger and simmered for 10 minutes. Topped it over rice. Another fantastic dinner!

Seafood Enchiladas

I was worried about how the recipe was going to turn out since it was my first time making enchiladas of any sort and I skewed from the original recipe quite a bit. I wanted to make enough for 10 enchiladas and I had the PERFECT amount. I followed Caren's changes to the recipe. I didn't have enough heavy cream so I mixed it with 2% milk to make it about 2 1/2 cups worth. I used 1 package imatation crab meat that I shredded with my hands and almost 3/4 bag of jumbo shrimp cut up into pieces. I used cornstarch instead of flour to thicken the sauce some. I didn't add sauce to the enchiladas like Caren did. I didn't want it any messier rolling them up. So I just poured the entire amount over the enchiladas ensuring to get the sides. I was able to stuff 10 enchiladas into the 9x13 pan. With about 8 minutes left in the cooking process I topped some cheese on top of the sauce and when it was done cooking, I placed sliced avocados on top. The enchiladas came out VERY tasty and moist!!! LOVED THEM!!! I paired the dish with black beans (with sprinkle of cheese on top) and spanish rice. My parents and husband claimed it was restaurant worthy! They were quite impressed.

World's Best Lasagna

I have had my fair share of Lasagnas and this has got to be one of the best I have ever had. It was my first lasagna that I have made and it turned out perfect! It is extremely meaty and cheesy. I used whole wheat pasta (soaked in hot water for 30 minutes versus boiling them) and diced tomatoes versus cruashed. I also used a bagged pasta sauce that was lightly seasoned with onion and basil. Next time I will try adding Nutmeg to the Ricotta cheese mixture! This sure made my husband and parents proud!

Award Winning Soft Chocolate Chip Cookies

This is the only recipe I will make for chocolate chip cookies! The pudding makes these cookies very moist and chewy. You can't go wrong! I made these once with Pistachio pudding instead of the pudding the recipe calls for and they turned out slightly green and delicious! I bet you banana or butterscotch pudding will be good too!!

Shrimp Scampi V

I made this recipe for my father-in-law and we both devoured it. I did not have fresh garlic on hand, so I ended up using garlic powder. I also added about 1/3 cup bread crumbs. The end result was delicious! I served the meal with Cream of Crab soup as an appetizer. What a compliment to the main course!

Baked Pork Chops I

I made this recipe tonight and my husband and I loved it. The pork chops were SO tender and juicy. Since I didn't have White wine, I used Marsala wine sauce. When it was time to put the sauce over the meat, I mixed some green beans and carrots into the sauce, covered the pork chops with the mixture, and baked it for 30 minutes. Since I don't like vegetables, it's a delicious way to eat them!

Ground Nut Stew

I had my husband make this one night this week and it turned out fantastic! The only thing he altered was he put in a can of carrots (with the juice accidentally) and it turned out fantastic! Next time I think we will try it without the carrot juice to see if it is even better.
