Fiesta Chicken from Uncle Ben's®

As I was making this recipe I felt that it was missing something. I used chicken broth instead of water to give it more flavor, but it was still bland. I would make this again with more spices to give it more flavor. If anyone else has any suggestions please share.

Self-Filled Cupcakes I

I gave this a 4 star rating because the filling sank to the bottom and when you take the cupcake foil off the filling in the bottom is heavy and came off with it. It does taste very good, but it is very rich. I think if I make these again I will not put in the chocolate chips. Also, fill the cupcakes 1/2 full with cake mix before putting in the cream cheese filling, maybe then it will not sink to the bottom????

Favorite Barbecue Chicken

This is a good recipe. I gave it 4 stars because it did not taste much like barbecue sauce. It tastes more like a sweet and sour sauce. Although it is still good it was just not what I was expecting. I am still looking for a good homemade barbecue sauce.

Honey Baked Chicken II

This is a great recipe. Thanks Amanda!! My husband is a very picky eater and he took one bite and said "this is really good". I made extra so that we could have some leftovers---but between me, my husband, and 2 year old daughter we ate it all and there was none left. I did as others suggested and only used 1/4 cup of butter. I will definitely be making this again. Soon!

Chicken Marsala

This is an excellent recipe. My husband even loved it and he is sometimes hard to please. I think that this is the same as or even better than my favorite chicken marsala that I get from a famous restaurant. The only changes I made is I only used 1 Tbsp of olive oil and only 1 Tbsp of butter. I did add a little garlic powder. Also, I took the advice of others and doubled the sauce. It turned out perfect! I will definitely be making this again.

The Best Banana Pudding

Excellent recipe! I made this for a family cookout and it was a definite hit! My husband was upset that there were no leftovers to take home. The only thing I changed was I only used 4 bananas and it was plenty. I also used mini vanilla wafers and it looked and tasted great!! I will definitely be making this again.

Roasted Vegetable Lasagna

This was a very good recipe. I took the advice of others and tossed the vegetables in a bowl with the olive oil to coat instead of brushing. I also used whole wheat lasagna. My husband was reluctant to try this because he does not like eggplant or zucchini. He also liked it! I will definitely make this again.

Coconut Poke Cake

This cake is excellent. I made it for my husband's birthday and he was very pleased. I will be making another one this week for Easter. I followed the directions exactly and it was perfect!

No Crust Strawberry Pie

This is a wonderful recipe. It is fast and easy and tastes great. My father-in-law is diabetic and this is a dessert that he loves. I have also made this pie with mandarin oranges and orange jello instead of the strawberries. It is a wonderful light dessert that you do not have to feel guilty about eating.
