I am very happily married to my best friend, soul-mate, and partner in crime. We recently got married and moved from the city out to the "boonies" der eh;) We traded in the smell of exhaust fumes for the smell of cow "poopy", the sounds of sirens for the sounds of.........ahhhhh, silence:) It's a new dawn, it's a new day, and I'm feeling good:)
My favorite things to cook
I am on a mission.......a life-long quest to find/create/steal the perfect lasagna recipe. I almost...(sigh)..."almost" have it. So, I guess it's my favorite thing to make:)
My favorite family cooking traditions
Big laughs to this. My mom was the poster-child for the microwave revolution. If it couldn't be "nuked"....she didn't bother. But, it's amazing how a taste or smell can re-create a child experience. My grandmother lived with us when I was young. She used to get up during the night and make pie crust and then wake me up to have a "snack". To this day, the smell of cinnamon/sugar reminds me of her. Her apple pie was to DIE for and to this day, cannot master it. My mom was always great with "left-over" casseroles. Fridays were casserole days in our house and usually consisted of anything in the fridge that had to go. Amazingly- a lot of the stuff turned out GREAT and what sucks is...she never made the same thing twice and never knew quite what she added to write down a recipe. Goulash was an all-time fav and so was spanish rice.
My cooking triumphs
I don't give myself many kudos in my life. I'm a very harsh critic and my worst enemy at times. But...I would have to say that my spaghetti/lasagna sauce is one of the best I've ever tasted. I also make an awesome stuffed sole and LOVE to make cupcakes:)
My cooking tragedies
I have many....lol.....MANY. But, it truly makes us stronger. I remember the first one. It was a biggy. At 19, I was out on my own and wanted to cook for my mom and step-dad. So, I invited them over for something and something, but I know for sure we had mashed potatoes.....well, I didn't know you added milk. I just thought you "mashed" them up with salt/pepper and butter. To this day, 20 yrs. later, my step-dad will hold his chest and say, " I think I finally swallowed the last bite of those potatoes Terra!" Another one was I made a shrimp stir-fry for my boyfriend when I was maybe 20. I didn't know that I bought shrimp that wasn't pre-cooked and I didn't know I had to "devein" them. OOPS. Not very appetizing when the poor guy points out during supper that his meal tastes like...well, you guessed it.

Yummy Sweet Potato Casserole
I LOVE this recipe:) Will be making again for 2012 Thanksgiving. The only thing different I do is I changed the vanilla to 1 tsp. and used cream instead of milk. I finely chopped the pecans on top only because of the guests who are older and might wear dentures. (hey, gotta look out for granny:) I've found that instead of measuring each cup of potatoes- I just use 5 large sweet potatoes. it works:)
