Curried Coconut Chicken

Reviewed: Feb. 24, 2010
This was great, a little sweet for our tastes so I added some homemade chili pepper ( made from 12 different hot chili's and very hot, so just a sprinkle was perfect) it gave it JUST the kick it needed. After reading the other reviews I also took the lid off halfway through and let it continue simmering, it was perfect, just the consistency perfect for over sticky white rice. I watched the rest of the leftovers disappear from the fridge today :) will MAKE this again. OFTEN... thanks so much for the recipe

Chocolate Crinkles II

Reviewed: Dec. 16, 2009
not a big fan :( sorry. Alot of work went into these and i just wasn't impressed with the result. Everyone else liked them though. I found them to be a little dry, they didnt keep well (even with the old bread in the container trick) and I wasnt a huge fan of the flavor. I am going to try changing this recipe a bit and trying again. I think an addition of semi sweet chocolate chips might help. I'll let you know how that goes

S'mores Crumb Bars

Reviewed: Dec. 16, 2009
these were ok. I actually liked them, it was a REALLY easy recipe, but I had alot left over and it went to waste... which is rare in my home. Not quite what we were expecting, but a close second when you have no fire available to toast the marshmallows :)

Turkey Brine

Reviewed: Dec. 16, 2009
THIS TURKEY came out great. I actually used a turkey roasting bag to brine the turkey in, I put the turkey in the bag in a cooler on top of ice, with ice all around it, I didnt get it into the brine until about 2 am the night before, and threw it in the oven (after rinsing of course) about 10am, this turkey came out soooooooooo juicy and yummy! the only thing I changed was that I stuffed about 1/4 cup of butter, cut into slices under the skin of the turkey on top of the breast( by separating the skin from the breast gently beforehand). The only thing I did not have leftovers of WAS THE TURKEY!!!! everyone asked for the recipe and this turkey was soooooo good... thankyou very very much for a VERY good and SIMPLE recipe!!!

Easy Curry Rice

Reviewed: Nov. 6, 2009
This is a very EASY way to make curry rice. I cooked mine over the stove and when it was done cooking I added 3 tbs of olive oil and 1 tsp or yellow curry to a large skillet ( more like a rounded wok really, very deep) i then added 4 chicken thighs cut into 1 inch pieces and sauteed till cooked after they were done I put them in a bowl to wait, Using the same oil I added 2 med onions chopped and sauteed till they started turned brown, then I added a handful of coarsely chopped unsalted baking cashews to the mixture, returned the chicken and added the already cooked rice stirring frequently over med heat until thoroughly heated and mixed. Turn off the burner and let sit for 10 min or so. This will allow the cashews to really soak in the flavor and be nice and tender with the dish. I'm telling you this tastes just like the stuff they serve at restaurants. So good. Everyone LOVED it! happy cooking

Chicken Curry I

Reviewed: Nov. 6, 2009
I made this dish with red curry. I cooked the onions and spices just as the recipe calls for, I poured that over my chicken thighs, carrots, potatoes and chicken broth in the crock pot and cooked on high till the chicken was done about 3 hrs. This dish went fast. Everyone loved it. tasted like a traditional Indian dish that we order at a local place and pay 5 times as much for. I served this with curry rice, white rice and some buttered and toasted tortillas. so yummy

Swiss Chicken Casserole II

Reviewed: Nov. 5, 2009
I took others advice and added a splash of sherry to the soup mixture, very good touch. I also cut the breasts into 1 inch strips added salt and garlic powder over the chicken and covered that layer of chicken completely with swiss. I saw others reviews and decided to prepare my stuffing first, very very good. moist and the chicken was juicy. Will make this again.

Garlic Top Sirloin Pot Roast

Reviewed: Nov. 5, 2009
OMG. AMAZING!!! I used a larger pot roast, with more garlic inside ( the garlic is very important ) ... Cook it for allll the time specified. Very JUICY and VERY TENDER. I made a gravy out of the juices in the crock pot. And made toasted swiss roast sandwiches under the broiler the next day with the leftovers. ABSOLUTELY the best roast I've ever had and please believe I EAT .
