Vegan Chocolate Cake

Brown Chicken Stock

Roasted Garlic Mashed Potatoes

Roasting the garlic was fun, but we didn't really like the flavor of the potatoes. It could be due to the fact I used homemade chicken broth instead of storebought. All in all, I've had and made better.

After-Thanksgiving Turkey Soup

Good stuff. I used a LOT of turkey to use up leftovers... Nice flavor and color, a little bland for our tastes. Lots of salt and pepper seemed to do the trick.

Candy Cane Fudge

Good. Like somebody else said, it's not exactly fudge. But it was good. I used a little blue food coloring barely stirred in. It contrasted with the red/white candy canes for a summer effect.

Challah I

This was good. Not our favorite (I always make challah with 1/3 white, 1/3 wheat and 1/3 barley flours, which I did here, but otherwise followed recipe.) We really enjoyed it, just not a fav. (We have 2 other recipes that are debating their superiority over each other...)

Whole Wheat Bread II

I made this again last week. This time I used 1/3 AP flour, 1/3 fresh ground whole wheat, 1/3 fresh ground barley... who needs storebought bread? All three loaves are gone in less than a week... going to make more today! Oh boy was this good... I have been looking for a nice bread recipe to replace our store-bought bread. This is it! Everybody loves it... I used my vitamix to grind the whole wheat berries into flour, and wrapped it tightly in plastic wrap after cooling. Yum! (Oh, I did also use more white sugar and less brown sugar, and a non-dairy butter substitute.)

Easy Slow Cooker Meatballs

I used my own sauce, but the meatballs fell apart and became mush in the crockpot. I made more of them baked in the oven (without sauce, with homemade barbeque sauce or sweet and sour sauce...) and they were great! The meatball recipe itself is nice, but it seems they just dissolve when cooked in a crockpot.

Creamy Rice Pudding

Great recipe! Very adaptable too... Somebody suggested using the leftovers ('sludge') from Lola's Horchata (on this site) so here is what I did: left sludge with 1/2 c. milk in fridge until I was ready to use. Added another cup of milk and cooked it in a saucepan until rice is tender. (Make sure it is actually tender! Water could also probably be used for this step.) Added another cup of milk and stirred until warm. whipped together another 1/2 c. milk (yes, 3 total cups) and 1/2 c. sugar, and the egg, and added it to milk. Cook until thick. Add vanilla. (I left out raisins and butter.) It was good, just be sure to cook the rice enough!

Italian Bread Bowls

We haven't actually sat down to eat them yet, but I thought I'd put down my thoughts. The recipe is nice. (I used part (maybe 1/3) Whole wheat flour. Oh and I added spices and skipped the egg wash. They do, as most have noted, seem to flatten out and become more wide than tall. Next time I will make sure and get them in to bake as soon as they have risen just enough. I also tried re-kneading the balls and letting them rise some more and it looks like it worked out. Maybe skipping the first kneading and just kneading the balls twice? or once if I can get them in fast enough... lol. Certainly one to have fun with... I'll post again if I figure something out... (once I've totally and maybe unnecessarily re-written the recipe as I have a habit of doing... lol.)

Sweet Corn Cake

Awesome... Wonderful... Can I continue? Just what I've been looking for for years. (They use to serve it at a Mexican restaurant in California.) It's a new Thanksgiving staple and a whatever-special-occasion-I-can staple. ;) Yes it's called corn CAKE. yum. (oh and don't forget to make sure and cook it long enough, especially if doubling/tripling/quadrupling the recipe... what? It was thanksgiving!)

Cranberry Pumpkin Muffins

This is becoming a Thanksgiving staple. Easy (my brother makes it) and delicious. It gets eaten quickly. We make ours in a bread pan and it takes about 40-50 minutes.
