Country House Bed and Breakfast Casserole

Reviewed: Jan. 9, 2010
Me and my family loved this dish!! I made some changes; I used more croutons-enough to cover the bottom of a 11x7 pan, change the recipe to serve 6 servings. I added a little bit of chopped green onions and used sliced American cheese (it's all we had). I will definitely make this again!!!

Baked Potato Soup

Reviewed: Jan. 9, 2010
Great soup....but I should have read the other reviews before making this. I will definitely use half the amount for basil next time. Also, I used a hand blender to puree some of the potatoes to thicken it up a bit. The soup tasted marvelous the next day!!!!

Chicken Marsala

This is a very basic and quick chicken marsala. Could use a little more depth in the flavor. But it's good for a quick weeknight dinner.

Teriyaki Pork Tenderloin

Reviewed: Aug. 5, 2009
Great recipe!!! I used it on a 4lbs pork loin. I marinated overnight and baked it uncovered, instructed in the directions. Because it was getting too brown, I had to cover with foil towards the end. I believe that it took 2hrs to get to 160 degrees. Family loved it!!!

Out of this World Turkey Brine

Reviewed: Jul. 11, 2009
This was my first time using the brine technique. My husband and I thought it was on the salty side. Although I did use it only on a turkey breast, I wonder if it would make a difference using the whole bird. I baked the turkey breast in a roasting bag, it came out REALLY moist, just too salty.

Marshmallow Treats

Reviewed: Jul. 7, 2009
I followed the review of another member. I slowly melted 1 stick of butter and 16oz. of mini marshmallows (Jett Puff). I added a capful of vanilla extract and 1 1/2 tea of milk. Then I added 10 cups of rice crispies and spread it out on a 9x13 Pyrex pan. It came out gooey and delicious!!!!
