Mini Pumpkin Cheesecake

These were a hit at work and home! I used gingersnap cookies as my base -just plopped them in the bottom of the muffin tin (I used paper muffin cups but baking spray would work too). I left out the cloves and the pumkin spice since I didn't have any. I just doubled the nutmeg and cinnamon and added some ground ginger (about 1/2 to 1 tsp). I beat the cream cheese for at least 2 minutes and beat really well after each egg -this made it super smooth and creamy. Made waaaaaaay more than 24 muffin cups. I'll be making this again for sure!

Pumpkin Fudge

I agree, if this didn't work for you it's not the recipes fault. I bake a lot but have never made fudge. This was SUPER EASY. all it takes is the patience to stir occassionally and test your mixture often. No thermometer used -just cold water and my own judgement. I cut the cinnamon in half, added 1/4 tsp (or so -I just eyeballed the measurment) of nutmeg and 1/4 tsp ground ginger. It was devoured at work before lunchtime hit and the people who missed out (I didn't have 2 or 3 pieces per person as wound up happening) are disappointed so I'm dipping into the ones I kept for myself so they can try it... 4 stars because I thought it would be even better than it was...

Caramel Slices

I love these cookies. I would only change 2 things; I would add toffee bits and I would leave out the nutmeg -you can hardly taste it and it dodesn't need to be there.

Easy Deviled Chicken

Since others mentioned that if you use italian breadcrumbs it needs more flavour I marinated in a bit of lemon juice, orange juice and a shake of pepper. I also cut the pieces smaller (like chicken fingers) so that there would be more breadcurmb flavour. Yum, I will definately make this again.

Simple Caramel Apple Pork Chops

OMG! Yummy is all I can say. I've never cooked pork chops without marinating them first so I was a bit wary but this was soooo good! My husband is working late and I'm having a hard time not eating his portion!!

Curry Beef Soup

Yummy! I followed the recipe except, like others, I added some cornstarch to thicken it and I also added some veggies (carrots and celery). I accidentally let it simmer too long so a lot of the liquid evaporated but it was still delicious! This is a recipe that can be easily adapted to each persons taste depending how strong you like it or what veggies you want in it. Would porbably be good with chicken or pork instead of the beef too.

Garlic Butter Shrimp

This recipe was soooo easy; I don't usually eat seafood but for his first fathers day I wanted to make something special for my husband (who loves shrimp). I added a clove or two of garlic and served it with extra garlic butter for dipping. He loved it and even I enjoyed some!

Orange Meringue Pie

This recipe was a hit for my mother in law's b-day, I should have made 2 pies! I followed the suggestion of another reviewer and reduced the sugar in the filling -I'll reduce it even more next time. I used lemon juice instead of lime but will try lime next time as I would like a bit more tang to it. Will definately use again!!
