Tropical Chicken I

This was so moist and sweet! I used brown sugar in place of white and added curry powder and paprika. I also served it over rice mixed with curry, paprika and lemon juice and baked for 50 minutes. I recommend this for those who like sweet foods.

Salmon Cakes II

This is so delicious, it's staying in my recipe box forever! I started with one fillet of frozen salmon - thawed it and cooked it on the stove for a few minutes and flaked it. Then I mixed it with the egg, Italian bread crumbs, Worcestershire sauce, pepper, cheddar cheese, dried parsley -- I also added red pepper flakes (which wasn't really necessary), onion powder, minced garlic and a little bit of Parmesan cheese. Then I followed the rest of the directions. I didn't need to cook for the entire 10 minutes; more like 8. This made three small-ish cakes, but if I could do it again, I would have made two larger ones. The Worcestershire sauce really stands out (to its benefit), but make sure not to add more than the recommended amount. This was so fantastic. I'm so glad I decided to go with this rather than a simple baked salmon with lemon!

Chicken with Garlic, Basil, and Parsley

So simple, but delicious nonetheless! The spices and the tomato perfectly compliments this moist chicken. I used minced garlic and put mozzarella cheese over the chicken for the last 10 minutes. I highly recommend this for a healthy, delicious chicken recipe!

Downeast Maine Pumpkin Bread

This smells so delicious while baking, and tastes equally delicious. I used 1/2 cup applesauce in place of half of the vegetable oil, substituted 1 cup of the sugar with 1 cup of brown sugar and used half whole wheat flour and half all-purpose. I also used pumpkin pie spice instead of nutmeg, cloves and ginger. For muffins, I would suggest baking for 25 minutes, and my loaf was done after one hour. Very good!

I followed the recipe exactly, and it was delicious! I would spray the aluminum foil so the breadcrumbs don't stick, but other than that this is my new favorite chicken recipe!

Zucchini and Tomato Casserole

I didn't have dill weed, so I used dried basil, subbed olive oil for margarine and used mozzarella and parmesan cheeses. I also sautéed the zucchini before I placed it in the oven. I wish the zucchini would have been crisper(maybe next time I'll try roasting it? I think steaming would turn out the same way), but I still liked it. Per another review, I put Italian bread crumbs under the cheese. It had enough flavor (I also added red pepper flakes and oregano), and, most importantly, it was filling. I served it with a piece of sourdough bread. I would make this again with a few alterations.

Portabella Burgers with Avocado Spread

I'd never tried portabella mushrooms before, but I was pleasantly surprised. Make sure to sautee them enough, because too raw doesn't taste nearly as good. The avocado spread is so good (I added lemon juice per another review and light sour cream in place of yogurt). I don't like onion slices or peppers, so I added tomato and lettuce. Be warned, it's VERY messy, but definitely worth it.

Eggplant Parmesan II

Very good! I suggest cooking the breaded eggplant for about 10 minutes on each side. I used more sauce than the recipe suggested, more egg, less bread crumbs were necessary and I sprinkled fresh garlic in with the cheeses. The second time I made this I included al dente penne on top of the sauce layers, and it was so much better.

Vegetarian Open Faced Sandwich

I sauteed the mushrooms and eggplant before broiling, and this was delicious! I don't prefer peppers or onion so I omitted those. I sparingly used shredded cheese. I definitely recommend this!

Chicken with Lemon-Caper Sauce

The chicken was so tender, but the lemon was a bit too strong. Watch how much lemon juice you add. The capers added a really nice flavor. I definitely recommend it!

Salmon with Brown Sugar Glaze

The glaze is so simple but don't let that detract you from trying it. I added rosemary and it was delicious. Because of the brown sugar, it may look like the glaze is burned after five or so minutes, but it tastes good nonetheless. I served with broccoli and brown rice and it was great. Nine minutes was enough in the broiler, so be sure to watch it.
