Italian Style Pork Chops

I changed this quite a bit...I took inspiration from my own personal chicken parmesan recipe for the breading. For four bone-in chops I used about a quarter cup of parmesan, a quarter cup of italian breadcrumbs and a quarter cup of crushed italian croutons. My solution to getting the breading to stick was I used one beaten egg yolk with about 2 tablespoons of melted butter. Once breaded I also spinkled on some garlic powder, then baked them at 425 for about 17 minutes. I generally loathe pork chops, but actually this wasn't too bad, and my roomate and boyfriend loved it.

Triple Berry Crisp

Nothing special or impressive, though it was still edible, it wasn't what I was expecting. It also took a lot longer to cook than it was supposed to.

Cranberry Orange Loaf

I followed the recipe exactly. It wasn't bad and it was a beautiful bread, but it wasn't sweet enough for my taste....the cranberries had to much bite still.

Cranberry Oat Bars

I used another reviewer's suggestion and added unsweetened applesauce to stretch the fillling and cut the tartness, then made it in a 13x9 pan, these worked pretty well and the foil made them easy to get out of the pan. I do think something to cut the tartness is necessary because even with what I did they were almost too tart.

Amish Breakfast Casserole

Had to leave out the cottage cheese this time for picky eaters...but this turned out pretty good even without it. I used leftover baked potatoes and grated those and used monteray jack/colby instead of swiss. Next time I'm going to at least make some with the cottage cheese.

Tomato Chicken Parmesan

Tasty and delicious...I did pound them a bit before hand like another reviewer suggested..and next time I will refridgerate them a little after breading them because I did have some difficulty with the breading coming off during the frying process.

Broccoli Cheese Bake

I used cheddar and monteray jack/colby blend and I added more milk...but this turned out pretty good...I also added seasoned breadcrumbs and more cheese to the top and baked it uncovered the last few minutes which made for a nice topping.

Quick and Easy Alfredo Sauce

Not 100% spot on authentic alfredo, but pretty good none the less. I took others suggestions and added oregano and a dash of nutmeg which really made a difference. This will definitely do in a pinch.

Cream Cheese Brownies

These were a hit with everyone I made them for. I substituted semi-sweet choclate chips instead of the white(personal preference), and used vanilla extract instead of orange because that's what I had on hand. I've made these with and without the frosting and both went over very well.

Apple Crumb Pie

I needed a way to use up some apples that weren't suitable to eat by themselves anymore, and this worked perfectly. I didn't use the raisins or walnuts because of picky eaters, and I used 1/2 cup of white and 1/4 cup of brown. I also doubled the topping mixture. This was pretty tasty and devoured quickly. It set up well, and the crumb topping was delicious. My only complaint was that it was almost too sweet, however this could be more at the fault of the gala apples that I had to use up, as they were not the usual tart apple used in most pies.

Meat Loaf Pie

I of course made some changes, but overall I really like this simple dish, and my boyfriend devours it everytime I make it. I doubled the worcestershire and ketchup and added a small amout of italian breadcrumbs, seasoning salt and pepper to the meat mixture, added in some minced garlic while cooking the beef and onions, omitted the corn altogether, and added 2 cloves of garlic in with the potatoes while they were boiling. I also used a combination of chedder and colby and monterey jack to top it off.

Crunchy Peanut Butter Swirl Brownies

Too cakelike and less fudgy than I wanted them to be. Also for some reason the layers did not meld together very well. This is likely my fault as this got tried late at night when I was extremely tired and distracted. They were tasty though, so I do want to try them again.

Banana Crumb Muffins

These were fantastic. Next time I will try adding the topping in the last five minutes to see how that works....also I worked the topping too much, but I have so little experience with this that I still don't have a feel for it. I'm generally not a baker, but I'm trying.

Garlic Mashed Red Potatoes

I'm not sure if this didn't turn out the way I was expecting because I let my boyfriend takeover or if the fault was witht the recipe, but this definitely did not live up. The garlic was way too subtle...I want to make the kind you get in restaurants, and this didn't even come close. I'll try again without the extra help and with more garlic and we will see.

Delicious Grilled Hamburgers

Definitely a juicy, tasty burger. I took others suggestions and halved the liquid smoke (might not next time just to see), and next time I will add an egg yolk for easier handling, but overall this was a winner.

Quick Mediterranean Pasta

I have to agree with some other reviewers that without any extra touches this was kind of bland. I doctored it and it did get better, and I have to admit it definitely tastes better the next day, so give it plenty of time to "marinate" and add seasonings, cheese, or whatever to your tastes and you have a decent recipe.

Beefy Manicotti

This turned out pretty well. I decided that I really wanted ricotta in it so I used less shredded cheese and added about a cup of ricotta to the filling. I also took others advice and didn't cook the shells before hand. They cooked just fine in the baking process, and it was pretty easy to fill them. I'm keeping this one.

Oven Fried Chicken II

The first thing my boyfriends said was "this has to be fried". This turned out really well. I cut the recipe and used drumsticks instead of thighs, which worked fine, and since I didn't have the italian breadcrumbs, I added some seasoning in with the flower. Overall this turned out really well, and I was able to serve it hot and cold.
