About this Cook
Growing up in a military family, I have lived in many different places and have tried many different kinds of foods. My mother taught me to cook and inspires me with her "only eat-out once a month and cook tasty meals everyday for my family" mentality. I learned to cook by her at a very young age (I baked my first loaf of bread at 7)! My Grandmother Florence used to make cakes as a side business and she was wonderful at it, so that inspired me to put detail into whatever I made. Cooking is comfort to me, and finding new recipes to try out on my family (especially for my very picky children, ages 2 and 3), excites me, because it feels so nice to cook a meal that is quick, easy, and inexpensive that they absolutely love and ask for over and over again. I look forward to continue to be the mom and wife who loves to cook and serve delicious meals for my family, and I hope to be the grandmother who makes yummy baked goods and meals that everyone can't wait to eat at the holidays :)!
My favorite things to cook
I absolutely LOVE to cook: Whole chicken (rotisserie style). I found a wonderful recipe on this website that I use whenever I do. Cheese Enchiladas (the cheesier the better). 3 words "BREAKFAST FOR DINNER". Sweet Potatoes (every time I use sweet potatoes, I try something different. They really are so versatile). Chicken schnitzel with a Marsala wine sauce (may sound weird, but it is wonderful). Asparagus (baked, steamed or any way, it's always delicious) ...Just to name a few!
My favorite family cooking traditions
Every time I bake, I have my daughter (Evie, 3) help me. She puts on her chef's apron and goes right to work. She likes to crack the eggs (she is actually better than daddy at this, LOL). Whenever we have a family function, it is always a potluck, and sometimes we have themed get-togethers (mexican night, etc.).
My cooking triumphs
I have developed a way to cook delicious mouth-watering (corn tortilla) enchiladas and scratch Chicken Pot Pie in only 25 minutes, start to finish.
My cooking tragedies
The time when I went to another website (to remain nameless) besides and got a recipe for oatmeal raisin cookies. Followed the recipe exactly and they were a disaster!

Mouth-Watering Stuffed Mushrooms
I LOVED these. The only thing differently that I did, was fried up some bacon and crumbled it and then added to the mix before stuffing them. I now bring these to every family potluck. Thank you for sharing this recipe.

Tastes just like restaurant style. Very delicious and very easy to make. A must try!

Roast Sticky Chicken-Rotisserie Style
The most tender and delicious chicken ever. Falls right off of the bone. The pan drippings are so delicious that I don't add anything to it, and just pour some over the plated chicken. So easy to make.
