Creamy Banana Bread

Reviewed: Jun. 30, 2011
Excellent 'Nana Bread! My two cents- always add extra banana to what is called for. A MUST to double the 'filling' and extra cinnamon in it , real BUTTER a must for me, reduced sugar in 'bread" by 1/2 cup - half brown sugar/half white sugar. Dust greased pan with cinnamon/sugar mix.....everyone loves it!!!

Pumpkin Roll Cake

Reviewed: Nov. 23, 2010
Excellent, alot easier than I thought. This was my first "roll cake". Pan - greased pan, used parchment paper (instead of waxed), greased the paper and sprinkled it with cinn. sugar & a bit of pumpkin spice. (I use the cinn/sugar comb. with Banana Breads, Spice Cakes, muffins etc... whether or not "flour dusting" is required. Read it here a long time ago- ) The cin/sugar/pumk. combo" produced a slightly crunch outside, adding another texture. Although I will use LESS conf. sugar in cream cheese to off set as it was on the extra ++sweet side. Cooling time for cake was about 90 min +/-. I was afraid to unroll it any sooner to test it! And yes, it did crack - no big deal...PS used a king size pillow case to roll it in - remember to place cake - the part you will start the rolling with, closer to end, otherwise there was too much material rolled in the center. Happy Holidays!

Creamy Cinnamon Rice Pudding

Reviewed: Jun. 26, 2009
Excellent!!! Used smaller amount of cinnamon in rice. The Best I HAVE HAD ! Additon: USE SHORT GRAIN RICE, it has more starch + inturn thicker pudding. I add cinnamon to each serving- when serviced. I felt it was a bit overpowering when cooked in to - personal preference. When pudding is finished cooking, I add raisins in half - hubby likes them, me, not so much. Making tonight, will try the vanillla suggestion, cant go wrong with "REAL/PURE" vanilla and/or scrap inside of a vanilla bean into pot, drop bean in pot while cooking,, removing before placing in refrig. HIT: I use my kitchen aid to "temper" eggs, saves time and your arm! When adding to pot, go SLOW, this will avoid the scrambled egg problem also. Ummmm!! This IS WORTH the extra time which really isnt alot, Everyone LOVES it!!
