Oven-Fried Catfish

I was excited to try this baked catfish with all the good reviews but this just wasn't for us. Wasn't crazy about the flavor of all the seasonings, way too strong.

Strawberry Cheesecake

I made the 9" cheesecake and felt there was plenty of strawberry sauce so whipped up another 8" cheesecake while the first was in the oven. I baked the 8" cheesecake for closer to an hour, maybe a little longer. I also did a water bath. No cracks and these taste wonderful!

Grilled Venison Backstrap

THANK YOU!!! My husband and I both agreed this is the BEST grilled venison steak I've ever fixed! I've often pounded our venison steaks flat, breaded and fried because I was never happy with them grilled but this was wonderful and we can't wait to make it for company! I had planned to follow the recipe exact but apple cider seems to be a seasonal item and not yet in our grocery stores so I ended up buying the instant spiced apple cider and used one pkt of that mixed with 6oz of water. I used KC Masterpiece Original for the bbq sauce then wrapped in thin sliced bacon and put them on metal skewers to grill. Awesome!!! I'm tempted to get some more steaks out of the freezer. :)

Jalapeno Strawberry Jam

I've tried out several recipes for jalapeno jellies but THIS recipe is what I've been searching for! I wasn't sure if I was supposed to take the seeds and membranes out of the peppers but decided to scoop out most of it with my little Pampered Chef Cook's Corer which works awesome for cleaning out peppers. Oh, and no I don't sell PP! :) Back to this jam...it's looks, smells and tastes wonderful with just a little bite. I used mucho nacho jalapenos from my garden. Thanks for the recipe.

Pineapple Mojo Cake

Just took this out of the oven and couldn't wait for it to completely cook to have a taste. Very good! I made it in a bundt pan, using a large can of crushed pineapple for the topping and also added 1/2 tsp of cinnamon to the cake batter.

Shrimp Artichoke Dip

I made this in a pretty dish, adding a can of crabmeat and lining the top with shrimp. It turned out beautiful, was well received and unfortunately there was none left to take home!

Slow Cooker Barbecue Goose Sandwich

Brian - Thank you for the great recipe! Truth be told this was my first time cooking goose and I was prepared for the worst and was pleasantly surprised. My in-laws where coming to town and I told them they could pick up dinner on the way or eat with us and I was surprised again that my MIL wanted to try it. We didn't tell my FIL until after he ate his sandwich and he was thrilled and went back for more! lol Thanks again!!!

Bruschetta II

Mmmm...I loved this bruschetta and so did everyone else at the party. Without a food processor it was a little messy to make but my small electric food chopper got the job done. I will definitely make this again!!!

Almond Chocolate Coconut Cups

Had to give this 5 stars because I loved them but had to make a few changes. First change was the crust...I mixed all the ingredients and it was not a consistency for rolling into balls so added another egg and some water. I then baked the crusts for 10 minutes which seemed too long when I took them out of the oven...they got very crunchy but after having the filling in them softened up a little. Next time I will check them after 5 minutes. The coconut filling is awesome! After reading the other review about the chocolate topping not setting up I decided to add less milk to the mixture, next time I will double the amount of chocolate topping because I had to make more. With all that said these were awesome! Everyone loved them and their were many request for the recipe. Thank You, Patty!

Spanish Rice II

I served this rice with chicken enchiladas last night and it was WONDERFUL!!! This is so much better than the Spanish rice mixes you buy at the store and even better than what most restaurants serve! I was out of white rice so I used a bag of yellow Spanish rice. I also replaced the water with homemade chicken broth, added a little garlic powder, pepper and kept everything else the same. Thanks for sharing this great recipe!!!

Cajun Seafood Pasta

This was ABSOLUTELY DELICIOUS and definitely better than any seafood pasta dish I’ve eaten in a restaurant! I made this on Valentines for my husband and we both loved it! I cut the pepper amounts in ½ and didn’t find it too spicy. I couldn’t find scallops at the time so used 1lb. of shrimp, thought it could have used more and will definitely add scallops next time. The only other thing I might change is to increase the amount of sauce or use less pasta…just because there didn’t seem to be enough sauce when eating leftovers. Thank you so much for posting this recipe, it is one I will make often!

A-Number-1 Banana Cake

Delicious!!! I was looking for a good banana cake recipe to use up some of the bananas in my freezer and this is just what I was looking for! Made 24 cupcakes and baked them for 20 minutes. I was going to add cinnamon and vanilla as some previous reviewers had but forgot and it tasted great without it! I frosted the cupcakes with cream cheese frosting and pecans. I’ve already received request to make them again!

Yummy Honey Chicken Kabobs

Made this for dinner last night and these were the best chicken kabobs I’ve ever made! My husband and I loved them and even my father who hates chicken thought they tasted great! I only had time to marinate the meat and veggies for 1-1/2 hrs and still thought they had great flavor. We used onions, zucchini and will add pineapple next time. I also used garlic powder instead of the cloves because I didn’t have any on hand. Plan on making these a lot this summer. Thank You!

Baked Mushrooms

I love mushrooms and thought this would be a great addition to the grilled pork tenderloin I was serving but these were awful! I left out the water and green peppers. When they were done cooking I tasted them and kept adding more seasoning and garlic salt until I liked them. These definitely needed some doctoring up!

Hot Fudge Ice Cream Bar Dessert

I made this for my husband’s birthday and was so tempted to alter the recipe and make it with caramel and pecans but made as is and we all loved it! I will definitely make again and might even try it with my caramel and pecans next time to see what that taste like. It makes a bunch so if I ever make it for the two of us I will cut the recipe in half or just do one layer of everything. Thanks for the recipe...I had been searching for an ice cream dessert and this is a great one!

Chili I

Thought this chili was delicious! A nice change from a package of chili seasoning. I used ground venison instead of the cube sirloin. Next time I will use less sugar as we found it to be a little too sweet.

Amazing Crab Shells

I made these for a New Year's Eve party and less than half of them were eaten. Everyone who tried the shells seemed to like them but thought they were rich. If I make this again I will cut the sugar down to 1 tbsp. and try heating them or using the filling for a dip as a previous reviewer suggested.
