Banana Banana Bread
Works Gluten Free! I have made this recipe using gluten free all purpose flour at least 10 times. Comes out wonderful. Have made the following additions: chocolate chips and walnuts, dried cranberries and macadamia nuts, cinnamon raisin, and tonight I made it Morning Glory with apricots, pecans, candied ginger, and a fresh chopped apple with a touch of nutmeg, cinnamon, and cloves. My freezer is stocked with at least three varieties at all times, and it travels well (take it with me on business trips since hotel breakfasts are usually loaded with gluten and crazy amounts of "food" chemicals). Great recipe!

Baba Ghanoush
Beats any Baba that you can buy. Easy to make. I follow the recipe exactly. Hubby adds a bit more lemon.

Easy to make. Turns out right every time. I simplify by cooking it all in one pot (not moving the ingredients in and out of the pan). I use only fresh ingredients (nothing canned). I also add either sliced mushrooms or cubed mango (but not both). Great over rice, but also makes a nice chunky spaghetti sauce if you add a few more tomatoes. Keeps well - makes good leftovers.
