Maple Glazed Turkey Roast

Reviewed: May 2, 2012
This was wonderful and is destined to become a regular meal here. The only thing I did different was I baked this in the bottom half of a dutch oven with 4 cups of water added and left out the salt for health reasons.

Blueberry Zucchini Bread

Reviewed: Aug. 9, 2011
For me, the oil gives it an off taste and isn't worth the calories. Perhaps if I used an expensive nut oil or butter, it would have been better. Otherwise, it comes out nice and moist. I can see how some of the additional ingredients some reviewers used like lemon and butter, would make it better but I won't be making this again.

Pan Fried Swiss Chard

Reviewed: Apr. 19, 2011
I used sliced corned beef cold cuts I had on hand instead of bacon to keep it lighter. It was delicious! The lemon was a great surprise for me. Will be making this often.

Couscous and Cucumber Salad

Reviewed: Apr. 19, 2011
This has a nice fresh taste. The kids don't eat it but my husband and I enjoy it. It's good for something healthy to pick on in the fridge.

Czech Roast Pork

Reviewed: Apr. 19, 2011
Nice cold weather meal. It's a nice alternative to the usual way I cook pork roast. The leftover gravy made a great additive to a chicken dish I made the next day.

It came out a little thick for me but was delicious! Will make this again.

Appetizer Meatballs

Reviewed: Apr. 19, 2011
I wasn't crazy about this but my kids loved it so I gave it 4 stars. To me, it tasted like processed food but what can you expect if you use ready made meatballs. Maybe next time I will try making my own meatballs and cooking them in the sauce.

Teriyaki Tuna

Reviewed: Apr. 19, 2011
Didn't go over too well here. Didn't like the blend of flavors and find the teriyaki flavor to heavy for fish. Also tried the sesame oil as suggested but that made it worse. Sorry. We prefer lighter flavors with fish.

Creamy Split Pea Soup

Reviewed: Apr. 19, 2011
This was tasty but not for people who don't like heavy food. The bacon and the cream was too much and made the soup sit in the stomach too long. Nice experiment but I'm going back to split pea without cream and smoked shoulder instead of bacon.

Spoiled Baby Back Ribs

Reviewed: Dec. 25, 2010
These were at least as good as the local restaurants. Even better because sometimes they don't use the freshest ribs. We used St. Louis style ribs and cooked them as full racks. We doubled the sauce as some said but then we were left with a lot of extra sauce - no problem because two days later it made great Sloppy Joes! (Just wet the browned chopmeat with the sauce and sautee a little more, doesn't need to swim in it). Instead of the extra honey some recommended, we just added a little extra brown sugar. I'm not sure that was necessary. I can understand how some might do it or find the vinegar too strong for their personal taste for dipping some as posted, but we prefer it as a coating cooked into the meat. That was flavor enough for us.

Roasted Butternut Squash Soup with Apples and Bacon

Reviewed: Apr. 8, 2010
In short - a complex soup not for everyone, better the next day. Mix the bacon bits into the soup to get the flavor mixed through. Try a drizzle of balsamic vinegar on top or cook it with vinegar. Personally, I don't like the soup without the vinegar and I don't think I like the apple cider.

Pat's Baked Beans

Reviewed: Apr. 8, 2010
I made a double recipe for a BBQ. I had so much food plus there were the non-bean eaters at the party so there was plenty left over. My husband really liked it and wanted me to save it all. I froze servings in Ziplock bags. When we wanted some, we would just empty a baggy in a pot with just enough water so it wouldn't stick and warm it up. I actually liked it better that way. It gave it an extra creaminess and the beans were softer. It was very handy but dangerous since it isn't such a low calorie dish. It's one of those foods that leaves a craving.

Beef Tenderloin With Roasted Shallots

Reviewed: Jan. 29, 2010
I have to jump on the bandwagon and give this a great review. It was tender and moist. I had fresh beef broth made from neckbones for the gravy. I served it to company and they all went for seconds and went on about how good the gravy was and started asking me how to make it. This was my first successful roast beef and will be a standard recipe for me.

Renaissance Stuffed Mushrooms

Reviewed: Dec. 24, 2009
Maybe I did something wrong but I found the texture too pasty. I guess I didn't go for the cream cheese against the mushrooms. It needed more contrast.

Beet Soup

Reviewed: Aug. 26, 2009
This is something I could eat every day. I used my homemade chicken broth because that is what I had on hand and no cream to cut calories. It was great without it. My son ate it two days in a row with seconds. He said it tastes like 'Thanksgiving'. added later: I've made this a few times now and find that it tastes better with chicken broth than beef. Also, I simmer it for an hour so the beets are soft. I try to use small beets. A final add: I don't recommend adding potatoes as some reviewers here mention. I've tried it when I was short on beets and thought it dulled the flavor.
