Whole Wheat Banana Bread

Reviewed: May 16, 2010
Some changes: used 1 and a half cups whole wheat flour and a quarter cup white (diabetic mother) used oats rather than wheat germ because I didn't have it, left out orange peel, took suggestion and used 3 bananas and 1 orange, splenda instead of sugar, applesauce instead of oil, walnuts instead of pecans. Turned out perfect in 45 minutes, very moist and smooth taste. Will definately use this recipe again!

Traditional Indiana Breaded Tenderloin Sandwich

Reviewed: Feb. 10, 2010
This was my first attempt at frying anything (kind of try to keep things healthy) and I didn't know my oil was too hot so I kind of burned the outside of the first two, but after that I just browned them in the oil and finished cooking in the oven and the Hubby RAVED! Few tiny changes for health reasons: used egg beaters rather than egg, made whole grain bread crumbs, and dipped in whole wheat flour before egg/milk mix. I WILL be making these again!

Champagne Cookies

Reviewed: Jun. 4, 2010
I had to use part white and part whole wheat flour because I was running low on white. After reading the other reviews, I used 1/3 cup shortening with the intention of using one egg. Once I got everything mixed up, it was so sticky I had to add more flour without ever adding the egg! the only other change I made was I added a capful of each vanilla and strawberry extract. They turned out good and tasted good, but without the strawberry extract, I don't know how much I would have liked them. I will make these again, with my changes.

Tropical Chicken

Reviewed: Nov. 16, 2009
Four stars only because I made several changes. Left out the cloves and added orange juice and apple juice to the marinade. Everything else was exactly the same and tasted INCREDIBLE!! very easy and tasted like a lot more work than it was, my kind of recipe ;)

Cinnamon Syrup

Reviewed: Feb. 3, 2011
I took other reviewers advice and added a half tablespoon of butter right after I took it off the stove. My husband took one bite and announced we would never buy syrup at the store again!

Lightened Urban Legend Cookies

Reviewed: Feb. 10, 2010
I followed the recipe exactly, only adding a tablespoon of cocoa powder and ommiting the chocolate bar. I also used half the amount of dark chocolate chips. The flavor of the cookies is good, but they were VERY VERY dry. Using the agave nectar probably added the much needed moisture to the dough. I plan on trying these again either with agave or more applesauce.

Egg Chicken Casserole

Reviewed: Dec. 21, 2009
This was incredible! only a few tiny changes. It's just my husband and me, so I halved everything using one can of cream of chicken mushroom soup. I also used moistened stove top stuffing instead of bread. Very easy, I will be making this again and again!

Potato Casserole II

Reviewed: Feb. 10, 2010
Very good. I made a few changes. I was making this just for the Hubby and myself, so I cut it down drastically. I added chives like another reviewer. I also used shredded mozzerella inside the potatoes, and sliced american over the top. Very easy and makes instant potatoes taste great!

Cranberry-Pineapple Minis

Reviewed: Nov. 16, 2009
I loved these! only two tiny changes. I used sugar free black cherry jello because my mom is diabetic. I also left out the apples on accident haha. Fantastic taste, great presentation, and tons of ways to personalize to your taste. I am taking these to two family thanksgivings this year!

Pumpkin Cookie Dip

I brought this to a November birthday party and everyone went crazy!!! I had to pass on the recipe twice and they are having it for family thanksgiving. This is now my go-to dip to bring to holiday functions :)

Crepes

Reviewed: May 31, 2011
Very easy for this first timer!! Next time, I might add a little more liquid, or lower the flour to get it a little thinner so it spreads around the pan a little better. Not a recipe error, just to help out a novice :) I stuffed with a combination of nutella, milk, and chocolate chips that I melted together in the microwave and topped with chocolate syrup, bananas, and coconut (trying to mimic IHop)

Two Ingredient Pumpkin Cake

Reviewed: Feb. 3, 2011
Very quick and easy. I did add pumpkin pie spice and 2 eggs. I added walnuts too but those ended up being a little overwhelming (my own fault) drizzled with vanilla glaze. I will probably make this again

Oat and Herb Encrusted Turkey

Reviewed: Feb. 25, 2010
Few tiny changes, but overall I really enjoyed this easy recipe! I pulverized the oats to help the breading stick a little better. I used savory instead of sage because I didn't have any sage. I put the spices in when I pulverized. I also sprinkled a little seasoned salt before baking. Didn't have whole grain mustard, so I used spicy brown mustard for both. Wonderful flavor; I will be making this again!

Asian Beef with Snow Peas

Reviewed: Feb. 10, 2010
I used sesame oil in place of the vegetable oil, and powdered ginger in place of the fresh, and I added a bunch more snow peas and a bag of mixed veggies as well. This was amazing! I can't wait to make this again!

Baby BLT

Reviewed: May 30, 2010
WOW!!! I made these for a jewelry party thanks to a suggestion, and was requested to make them AND bring the recipe for memorial day two days later! Went diet on it, used light miracle whip, 1/3 less fat cream cheese, turkey bacon, and added ff chedar cheese. I also used roma tomatoes instead bc they are easier to mess with than the tiny cherry, but still small enough to be a good finger food.

Salmon Fillets with Creamy Dill

Reviewed: Jan. 7, 2010
To reduce calories, I used fat free mayo and only 1 cup and it still turned out really good. The sauce made a BUNCH, but it also cooked up some in the oven, so put on more sauce than you think you need. I saved the extra sauce to use on chicken.

Cheddar Bacon Hamburgers

Reviewed: Dec. 30, 2009
These were excellent! Only change I made was fresh garlic rather than garlic powder because I did not have any. My horseradish was extra hot, so 2 TB was enough for flavor. Will make these again!!

Swanson® Greek-Style Beef Stew

Reviewed: Dec. 29, 2009
My husband requests this all the time now! only changes: didn't have cheesecloth, so I just tossed in a little of each spice. I also added a package of onion soup mix instead of the whole white onions. Wonderful meal that tastes just as good if not better heated the next day!
