Best Tuna Melt (New Jersey Diner Style)

Loved this recipe! Didn't have all ingredients on hand but the addition of red wine vinegar is great. Will definetly use again.

Ten Minute Enchilada Sauce

I just made this for my mom's recipe of chilaquiles. I could have made my mom's red chile sauce but it requires more work. This taste very good. I only had regular McCormick's Chili powder on hand and cut down to what other reviewer's had suggested. I'm not a "hot" lover but next time I will add what the recipe asks for. It taste very good but it needed more kick to it. Consistency was excellent.

Marinated Grilled Shrimp

Wonderful recipe! we didn't have cayenne pepper so i used chili powder. wonderful! used recipe as directed and got compliments on what a great flavor. between 3 people ate the 2lbs. of shrimp. next time would add more chili powder and would double the recipe for hopefully some left overs.

Creamy Potato Leek Soup II

This is a very good recipe and the only reason I don't give it a 5 is because I used several of the suggestions from other reviews. We try to make healthier meals for everyday dinners. This is what I did and it worked out wonderfully. 1.used 1/2 the recommended bacon and used turkey bacon WONDERFUL 2. used 6 potatos 3. used 6-8 cups of chicken broth to make it to my taste otherwise WAY TOO thick 4. when cooking the leeks I added salt, pepper, 1 shallot and garlic salt. 5. pureed half the soup and lightly mashed the rest of the potatoes so they weren't so big.

Rempel Family Meatloaf

I LOVE meatloaf but the rest of the family doesn't feel the same way. I made this last night and they LOVED it. I did make a few changes as suggested by others: added bread to soak up the excess fat and added 3/4 cup of round crackers. I didn't have steak sauce and substituted 1 tsp of liquid smoke(mesquite). I of course always searching for healthy lowfat meals subsituted eggs for egg whites and used lowfat round crackers. It came out sooo flavorful! If my husband claims it's outstanding and barely left any for my teenage son then I know this a keeper!

Chili I

I've never made chili before and my family loved this! The sauce is outstanding. I modified the recipe for our taste and used suggestions from other posting: knocked the brown sugar to 1/4 cup, used 2 cans of kidney beans, since we don't like it hot I used only 1 chili pepper and no cayenne. By family vote, I just got another excellent recipe for dinner.

Insalata Caprese I

I wanted add a new italian salad for italian night dinner. My husband and 17 year old daughter loved it. It was so flavorful and zesty. They ended mixing leftovers with lettuce berg. Thanks, it was a hit! Raquel Altavilla
