Todd's Famous Blueberry Pancakes

Delicious, but this recipe only made about 6-7 pancakes. I about doubled the amount of blueberries--personally, I like the berries to be close together.

Easy and delicious. I'm never exact with the amount of ingredients--like the other reviews said, double (or at least add more of) milk, butter, salt etc. I also added some garlic.

Pumpkin Cookies III

mmm delicious!! i used: 1/2 cup butter, 1/2 cup applesauce 2/3 cup packed brown sugar, 1/6 cup white sugar 1 cup all purpose flour, 1 cup bread flour 2 tsp ground cinnamon 1 tsp nutmeg about 1 1/2 cup canned pumpkin (i had part of a can left and just used it all. this is a versatile recipe) a mixture of about 1 1/3 cups of chocolate chips, raisins, and craisins batter was good. fresh out of the oven was good. but... plastic wrapped when still warm and unwrapped the next day--the moisture gets trapped within the cookie. it's delicious. when people call a cookie "cake-like," i usually think of light, fluffy, not hearty cakes. but if this cookie is to be described as cake-like, it's definitely dense, the good stuff. loved this recipe! ps--each cookie was about 100 calories

Absolutely delicious. I'm not the greatest baker, but this was easy to make and even easier to eat. Very rich--more like cake than bread.

Chocolate Chocolate Chip Cookies I

SOOOO GOOD. I mostly ate it in dough form. I made this really quickly, except that I had trouble with the butter--it was still cold when I put it in the mixer and crumbled. I fixed it by microwaving the mixture (in a different bowl of course)--perfect. I adjusted the recipe for 24 and used 6 tbsp butter, 1/4 cup applesauce--next time I'll try it with more applesauce to make it healthier. I used a little less sugar than called for. Besides that, pretty much followed the recipe to the t. It was nice and rich and gooey and soft--but not painfully sweet. YUM!

Lamingtons

I loved these lamingtons (I love chocolate in general), but my family found it too sweet--probably because I used sweetened coconut. Getting the cake out of the pan and coating it with chocolate was a little tough--it kept breaking apart. Besides that, yum.

Marbled Pumpkin Cheesecake

Made some changes--cooked this in a regular 9 inch pie pan. I was worried that it wouldn't come out clean, but it did! After running a knife around the edge, I waited until the cheesecake was room temperature then stuck it in the fridge, still in the pan. The next day, I took it out, turned the pan upside down on a plate, and patted the bottom a couple times. I could hear it unstick. Then, I took another plate and flipped the cheesecake over onto it. The marble design wasn't hurt at all. I used about 2 cups of crushed gingersnap cookies with the same amount of butter; with only 1 1/2 cups, there were gaps in the thin crust. Omitted the pecans because some guests can't have nuts. At first it didn't seem like enough crust, but it was actually perfect. I upped the cinnamon to 1 teaspoon, the nutmeg to 1/2 teaspoon, and added 1/2 teaspoon of allspice. YUM! I haven't actually cut a slice of the cheesecake yet, but some of the very bottom fell off when I was taking it out of the pan (it's okay, it's in the middle of the cake and barely noticeable). It was great! Like light pumpkin pie... and the gingersnap crust was absolutely perfect (I, too, had had my doubts about it). I'm only giving this four stars because, it being my first big successful baking project, didn't LOOK perfect (not the recipe's fault, but my own). This is a must try, though--definitely!

Gingerbread Men

Wow! It was quick and pretty easy. I had been wanting to make gingerbread men for a while but didn't feel like getting shortening/molasses. I looked at this recipe and turned my nose up to it, too; I didn't want to get butterscotch. However, opening the cabinet I discovered that we had an old packet of the instant pudding mix--surprise surprise! I wouldn't have made these if I had the choice between these and real gingerbread men--I like my men to be more authentic. However, with the ingredients on hand they turned out very soft and good. They were a little too sweet for my liking, though--tooooo tooo much sugar. The dough started out dry, but the more I used it the more it softened up. Rolling it out was complicated and a little sticky, but it wasn't TERRIBLE. When I actually baked the men, they spread and came out OBESE. However, I only baked them for 8 minutes so they were still soft, and I used my cookie cutter on the baked cookies to make them much much better looking (plus I got to eat the scraps. haha.) Overall, a good recipe.
