I made this in my blender as stated, and had to add water because my blender would not make the garbanzo beans into a paste. However, the flavors were spot on & my "Garbanzo Bean Mounds" were delicious. I even used some of it on the nopal tacos I made earlier today. I will try this recipe again after I go out & purchase a food processor!

Black Bean And Corn Salad I

This salad is delicious & so easy to throw together! The flavor of the black beans mixed with the corn, onions & spices is perfect. This dish also lasts for days & can be used as a main dish or a side. I made it for myself & my boyfriend, this time... but I think I'll also make it for the next potluck I go to! Excellent!

Quiche

This quiche was perfect. I did use a block of swiss cut into small cubes (like my mom used to) instead of shredded & I used bacon instead of ham. I'm lazy, so I got a pre-made, pre-rolled pie crust. It came in a package of 2, so I guess I'm going to have to make another one of these. Yummy!

These are so fun and cute! Great for kids, but my (adult) boyfriend loves them too. They take a little more time than just wrapping croissant style, but for a spooky treat it's totally worth it!

Pasta with Pesto and Scallops

I don't cook seafood a lot, but this caught my eye & I was not disappointed. It was quick & easy to make & it tasted delicious! I will definately be making this one again!

Beef Enchiladas

These were great! I love Tex-Mex, and living in Southern California it is impossible to find Tex-Mex anywhere! So I was glad to find this recipe. I despise soft corn tortillas, they fall apart & they taste unfinished (like someone forgot to cook them.) So I was glad to see a recipe that called for flour tortillas. This recipe was easy to make, very tasty & I had leftovers for the next couple of days. I would definately make this again if I had a gathering of people, as it could be made beforehand & popped in the oven!

Pumpkin Turkey Chili

I loved this. I don't know what I was expecting, but I love pumpkin & I make almost everything with ground turkey, so it sounded perfect. I did alter one thing & added black beans as suggested by another reviewer. I thought the spicing was great. My boyfriend didn't even know there was pumpkin in it. It was a little thick, but not in a bad way. A surefire hit!

Carne Asada Tacos

These tacos were delicious! For some reason, AllRecipes put fresh tomatillos on my shopping list. I've never cooked with tomatillos before, but the sauce turned out great. I used whole wheat flour tortillas instead of corn, because I don't like corn tortillas. Even my boyfriend loved them...and he prefers ground beef to steak. I will definitely make these again!

Baked Garlic Parmesan Chicken

This was delicious, healthy & easy to make. I used powdered garlic & replaced the oil with egg whites to reduce the fat a bit. This will definitely go in my regular rotation!
