Spinach Cantaloupe Salad with Mint

I prepared this salad exactly according to the recipe, except I doubled the ingredients. It fed 8 adults one side-dish serving each. I like that the salad is so unique and such a beautiful presentation, but I found the dressing just too weird, even though I'm a very adventurous eater. I made three recipes from this site for a barbeque today and got raves on the other two; not a peep about this one. I might try it again with a dressing of my own choosing.

Fat Free Tartar Sauce

This is really delicious -- a little sweet and a little tangy -- and so easy. A dash of salt made it even better. I'm a huge fan of tartar sauce but never seem to have it on hand when I want it. What's extra great about this is it uses ingredients I usually have on hand, so I can whip up a batch whenever needed. Thanks for a terrific recipe!

Pumpkin Waffles with Apple-Cranberry Relish

I wish I could concur with other reviewers but I can't on this one. I followed the waffle recipe exactly. What I liked about this recipe was the use of WW pastry flour and pumpkin, and the spice seemed like a nice touch. In reality, I found them to be bland, very little pumpkin or spice flavor. They tasted very "eggy" to me. I needed more flour because the first few waffles were golden on the outside but not cooked in the middle. The cranberry relish is a unique touch, but couldn't make up for the waffles. I don't think I'll make this again as nice as idea as it is.

No Bake Sugar Free Cheese Cake

Hmmm, I like the alternative but diabetic people should be aware that this recipe is not sugar free. Graham crackers have 7g of sugar per serving, Ingredients in graham crackers typically include sugar and high-fructose corn syrup.

Rice, Asparagus and Cucumber Salad

This is an easy, delicious, and different salad -- great alongside grilled salmon and got lots of raves and extra helpings. I made it exactly as instructed this time but might try brown rice next time and a few of my own other additions for fun.

Margaritas

This recipe is about as easy as they come -- with my regular Kitchen Aid blender I don't even crush the ice first. These Margaritas are not too sweet, not too tart, and they will get rave reviews from your friends! What more could you ask for in a drink?!? This recipe is a keeper.

Southwestern Egg Rolls

I followed this recipe to a T -- except -- baked instead of fried. They were restaurant quality, very yummy. Be sure to use THIN flour tortillas, not the soft/puffy variety. To bake, place rolls on a baking sheet covered with parchment if you have it. Coat rolls with cooking spray and bake on center rack at 450 for 10-12 min., checking halfway through, until dark golden brown. I doubled the filling recipe and made 8 rolls using 8-inch tortillas, adding avocado slices to half of them before rolling. Sliced finished rolls in half on the diagonal to serve. Worked out very nicely.

Chicken and Garlic

Even with the juice of a whole lemon and lime, this was kind of plain -- and dry served over rice. If there were some way to make a sauce of these ingredients, it might be yummy because the flavors are good. Watch your chicken closely because overcooking will make this dish even more dry.

Caesar Salad Supreme

I followed this recipe exactly, but neither I nor my Caesar salad-loving family members liked this. The dressing is very thick, too garlicky, and there is WAY too much of it. Even when I added a second large head of Romaine, the salad was overwhelmed.

Bright and Zesty Broccoli

I really wanted to like this as it is an easy and quick way to give a twist to regular ol' broccoli. But my family did not care for it. It had a bitter taste (maybe from cooking the orange zest?) and was too spicy (we are "mild heat" type of folks).

Peach Coffee Cake II

This is a good recipe and a nice side dish at breakfast time, and looks delicious. The cake was light and moist and the peaches tender -- everything you'd expect a coffee cake to be. But like some others I found the overall recipe lacking in flavor. Part of that (I think) was because my peaches were bland, but mostly I think this recipe needs spices added to the batter and/or sugar/spices added to the fresh peaches. If I make it again, I'd be tempted to make extra topping and add a layer of topping under the peaches. Canned peaches might actually be better because of the extra sugar/syrup would add flavor. I used my stand mixer and mixed the batter really well till light. Be sure not to put too much batter on the bottom half (layer will seem thin but that's OK) or you won't have enough to stretch over the top. I found that using dinner knives (one to spread the batter and the other to scrape stuck batter off the spreader) did the trick in mostly covering the peaches. Love the topping and it was a satisfactory amount for me. By the way, using fresh peaches, this takes much longer than the 20 minutes indicated to prepare. I used a glass pan sprayed with coating (no flour) and the cake came right out.

Glazed Chicken Wings

These are yummy and super easy. Be sure the wings are dry to the touch before you start, especially if using thawed frozen wings, or you could end up with watery sauce that doesn't stick.

Santa Fe Rice Salad

This recipe is so different from the typical salad, and I loved it. It is such a beautiful, healthy, delicious dish. I used brown rice and that was terrific (although I'm a white rice rice lover and want to try that next). I would advise serving the avocado on the side if you're not sure about the tastes of those who will consume it. I made this for a potluck that required gluten-free and vegetarian dishes -- not an easy thing to accommodate -- and it was a hit. My gluten-free aunt continues to rave about this salad months later.

Candy Cane Fudge

Vanilla baking chips are not available in my area; I only found them online from one seller but used white chocolate instead. In that case, people who don't care for white chocolate (like myself) probably won't like this as much. But it's so pretty and a nice touch at Christmas. Stir the candy cane powder and shards into the fudge, swirl in red food coloring (rather than stirring it in completely), then press the larger pieces of candy cane into the top.

The Best Rolled Sugar Cookies

You will like this recipe if you are after a thick, chewy cookie like the ones you can often purchase piled high with frosting that are appealing to the eye. Kids will love these. If you are after a cookie that has good texture and flavor, this isn't your recipe. I added the extra teaspoon of vanilla but that didn't do much for the flavor, which is bland. The texture was chewy -- not bad per se -- just not what I think a delicious sugar cookie should be. Also, the surfaces of my finished cookies were crackled, not good if you plan to use a glaze or thin icing. However, I used 1/2 cup extra sugar so that might be the reason; therefore I didn't take that into consideration when rating but it's worth mentioning for others to consider. You can achieve a thick, tender cookie with just about any sugar cookie recipe if you roll the dough thick and are careful to slightly undercook the cookies, similar to the process in this recipe. But other recipes will give you more texture and more flavor.

Baked Doughnuts

I made these based on the instructions that said a cookie sheet would work (I don't have a donut pan) and the first few reviews, which were all positive. I wish I had read more reviews because I too found these (a) not at all donuts; (b) nearly flavorless. They smell wonderful but they taste bland and are not very sweet. Because the batter was so thin, I ended up making muffins -- makes about 16 of them. My kids at them after I added some Cinnamon Bun Icing from this site.

Perfect Berry Shortcakes

I found these to be a nice balance between a drier biscuit shortcake and cake -- they were tender with a nice texture, buttery, and sweet. My husband doesn't care for biscuit shortcakes, but he liked these. It's an easy recipe and will probably be my standby for shortcakes from now on. Be sure to read the recipe thoroughly before you begin because it has a few twists from the usual. Pass the berries! Yum!

Firecracker Grilled Alaska Salmon

This easy and delicious. Keep the heat high enough on the grill to get some good crispy glaze on the fish. I used frozen Atlantic salmon and it turned out great. Everyone loved it.
