Black Bean and Salsa Soup

Hungarian Mushroom Soup

Very Good. Added a little extra broth. Cooked all day, but added sour cream near the end. Took a while for sour cream to mix in. Next time add some of the soup to the sour cream, mix and then add to pot.

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

Im not a big pork fan but this was delicious. I browned the pork in the pans with the browned onions, then put in a casserole. After preparing tomatoes, I put on top of pork and baked. The sauce comes out great.

Butternut Squash Risotto

This was great. Ended up using 4 cups broth. I didnt add squash until the end. I just kept adding broth a little at a time and stirring until absorbed. That's the way i have always made risotto. I also heat the broth before adding so that it doesnt cool off the rice. I'll be making this often.

Grilled Salmon I

I thought I didnt like Salmon. Guess I was wrong. I baked in the oven for 15 min (in foil packet) and broiled for 5 mins. as per another reviewer. Changed nothing else and marinated for 5 hrs. Delish.....

New Potatoes with Caper Sauce

Delicious. I did cut the potatoes in 1/4 even though they were small. I used white balsamic instead of white wine vinegar. Cant wait for the leftovers today (not as much as I would like though)

Spinach and Feta Pita Bake

We loved this. We founf it was great for a dinner, and we each only had 1 of the pitas. The only change I made was in the pesto. I couldnt finf sundried tomato pesto, so I added 1/2 jar of regular pesto to some tomato sauce I had. Delicious. i also cooked a little longer.

Marinated Tuna Steak

My husband LOVED this, he said it was restaurant quality. Followed the recipe exactly, except I used dried parsley. I heated a cast iron skillet on high. Then added a little olive oil and seared about 2 mins on each side. I loved it and I dont think I have ever lked tuna when I tried it.

Slow Cooker Chicken and Dumplings

We really enjoyed this and I took a few suggestions. Only used 1 can of biscuits (grands) and used 1 can of chicken broth instead of water. Also, I didnt add the butter, didnt think it was necessary and it adds calories.

Slow-Cooker Pepper Steak

Everyone loved this. I did thicken the sauce with some cornstarch. I also cut the peppers into strips and did put them in at the beginning. We like them soft.

Chocolate Chip Banana Muffins

I made several changes, so as good as they were I bet the ones made exactly as this recipe states would be even better. I used 1/2 cup of whole wheat flour, skim milk instead of yogurt and 1/2 ground flax for 3T of the oil. I also used 3 bananas which is more then the cup. Everyone loved them.
