I felt this had so much potential, but it ended up being reminiscent of my mom's hot tuna sandwiches from when I was a kid (you know, the ones on hamburger buns wrapped in tin foil?). I expected a more sophisticated flavor. One good thing, though- the cream cheese mixture, minus the cheese and salmon, had a great flavor and would be good as a cheese spread on crackers.

Mini Cheesecakes

Used vanilla wafers for the crust, but had to crumble them because they didn't fit in the cups when using my miniature muffin tins. Great flavor, though, and always a hit! They added nice color to my dessert buffet at a baby shower.

Pecan Pie Tarts

Made these for a shower, and everyone seemed to like them. However, even though I ended up using less of the crust in each of the muffin cups then described, I still had too much filling left over, and they were a bit heavy on the crust.

Brunch Strata

I made this on Christmas Eve and put it in the oven on Christmas morning while we opened gifts. This makes two pans full, so great for holidays with company. I loved it, but my grandson didn't like quite so many veggies. I might consider making a pan without the zucchini next time.

Pumpkin Roll I

I don't know why I waited so many years to try this- it's so easy, especially using the technique recommended by other reviewers (spray pan with cooking spray and then line pan with parchment paper). Great traditional recipe that looks like so much more work than it requires!

Creamy Cheesy Scrambled Eggs with Basil

Very good for a quick, light supper or a fancier scrambled egg brunch. Since I was in a hurry and wanted some garlic, I added garlic salt instead of fresh garlic - but I did take the opportunity to use some fresh basil from just outside my door! Will definitely make again.

Pumpkin Fluff Dip

Yummy! This was an absolute favorite at the holiday potluck where I served it. It's delicious served with gingersnaps, Nilla wafers and cinnamon graham crackers - but a decadent treat slathered on a piece of pumpkin bread!

Peanut Butter Stuffed Jalapenos

Our preferred way to make these is NOT to cook them- just use a fresh jalapeno, mindful to remove seeds and membranes. Reminiscent of more-traditional stuffed celery, but with some real FIRE! Not for the faint of heart!

Stuffed Jalapenos III

Meringue Mushrooms

These "mushrooms" are sure to impress everyone, and they're really much easier to make than seems possible! The recipe has everything- great presentation, good taste and texture, and it's low in fat! I made these for a wedding shower, and everyone loved them.

Delicious! It was even better after it sat for a day to allow the flavors to meld. You may want to add a red pepper, as the presentation is a little bland, and doesn't do the flavor justice.

Cream of Asparagus Soup I

Wonderful recipe! Just a few small changes- I used fat-free half and half (unfortunately, I was dieting at the time, but it didn't hinder the taste or texture at all!) and reserved pieces of asparagus (not just tips) to add to the texture. Like others, I like some "chunks" in my soup. A keeper!
