Apple Cinnamon Muffins

Pretty good for a super-healthy modified recipe. Don't expect them to taste like regular high fat, all white flour muffins, though, because they don't.

I have had a craving for barbeque something for a while, but I don't eat meat or fake meat products made out of soy so I didn't know what to make. This totally satisfied me! What a great recipe. I found this recipe a half hour ago and have already enjoyed a delicious sandwich. I like this because it is easy to cut down the recipe for just one person. I used hamburger buns instead of kaiser rolls. This makes four small sandwiches. Thanks for the great recipe.

Chili Vegetarian Style

The best veggie chili ever! Great consistency. I consider this a very sweet chili, so next time I might decrease use less splenda. Makes a big pot. So good!

Mary's Roasted Red Pepper Dip

This was okay, pretty good but not what I expected. I expected a lot of flavor and something different tasting. What I got was basically a baked cheese dip with a tad bit of the flavor of roasted red pepper. This is okay, but I wouldn't make it again.

Baked Ziti I

Excellent as is and so easy! Don't change anything until you try it as written first. To address some of the other reviewers- don't use more provolone than called for and the sauce WILL get to the bottom layer. Also, don't worry if you couldn't fit all the ingredients in and had to leave some sauce out- I thought it was too saucy anyway. I'm going to reduce the amount of sauce next time.

Spinach Pie

This egg pie has the taste and consistency of a crustless quiche. It is so easy to make! I would prefer a firmer egg dish so next time I am going to use much less heavy cream and add more eggs so that it has more of the consistency of a frittata. This recipe is not really for me, but with changes might become something I make over and over. If you like quiche, you will like this recipe.

Baked Macaroni and Cheese

Don't pour the melted butter into the egg mixture without letting it cool slightly first. Pouring any hot liquid into egg or egg mixture should always be done carefully, by letting it cool slightly first and then by mixing it in vigourously to avoid letting any of the egg set. This macaroni definitely tastes even better leftover and reheated.

Mexican Casserole

This is okay because it is so simple and easy to make. Kind of a boring flavor, but that is to be expected from the few ingredients. If you use a good quality chunky salsa, you can omit the onion, but remember to bake it longer if you won't be heating up the beans.

Classic Peanut Butter Cookies

I'm no peanut butter cookie expert but these looked beautiful and tasted great. Let them cool on the pan a minute or so to avoid breaking them while you are taking them off the pan.

Pineapple Enchiladas

The best thing about this recipe is how easy it is. The bad is that for me it was almost overwhelmingly sweet by the end of one piece. I'm going to try this again, with a little less pineapple, and some chopped green pepper or onion or green chilies added to the filling.
